Thunderbolt is a vibrant neighborhood cocktail bar located at the intersections of Historic Filipinotown, Echo Park, and Downtown Los Angeles (DTLA). Thunderbolt is currently seeking a Head Chef to join its dynamic team. As the culinary leader, the Head Chef will have a pivotal role in driving the success of all kitchen operations. This leadership position requires a balance of creativity and operational expertise, where the chef will own all aspects of menu development, food quality, kitchen systems, labor management, and financial performance. The ideal candidate will be responsible for ensuring every dish meets the highest standards of taste, presentation, and consistency in every service—from brunch and lunch to dinner, late night, and specials. This role demands a disciplined approach, strong leadership skills, and the ability to work efficiently during both high-volume service periods and day-to-day kitchen operations.
The Head Chef will lead the development and maintenance of food menus that reflect the Southern-inspired concept while considering seasonality and operational feasibility. This includes creating new dishes, testing recipes, and standardizing preparation and plating guidelines. The chef will manage inventory, ordering, vendor relationships, cost control, and compliance with health and safety standards. Additionally, the role involves building a motivated and high-performing kitchen team by hiring, training, and coaching culinary staff and enforcing a culture of professionalism, urgency, teamwork, and respect.
This position reports to the Director and General Manager, requiring collaboration to align culinary and operational goals and to contribute to financial reviews. The Head Chef will also oversee kitchen cleanliness, maintenance, and BOH organization, ensuring operational discipline with thorough closing and reset procedures. Job Requirements
- Minimum age of 21
- Ability to lift and carry supplies up to 30 lbs
- Must be able to stand and walk for 4 to 8 hour shifts
- Ability to work flexible schedule including nights, weekends, and holidays
- Ability to operate point of sale system
- Must meet all health and safety regulations related to food handling and alcohol service
- Excellent guest service skills
- Ability to work effectively in a team environment
- Must maintain uniform and grooming standards
- Ability to follow instructions and learn basic tasks
- Must be able to work around hazardous chemicals
- Must be able to hear well in a loud environment
- Ability to observe and differentiate monetary denominations
- Prior experience in food service industry
- Strong communication skills
- Good physical stamina
Job Qualifications
- Proven experience as a Head Chef or similar leadership role in a restaurant kitchen
- Strong culinary background with expertise in menu development and recipe standardization
- Excellent leadership and team management skills
- Solid understanding of kitchen operations, labor management, and financial accountability
- Knowledge of food safety regulations and standards
- Ability to work efficiently under pressure during high-volume services
- Exceptional communication and organizational skills
- Experience with inventory management, vendor relations, and cost control
- Culinary degree or equivalent professional experience preferred
- Ability to train and develop kitchen staff
- Commitment to maintaining high standards of cleanliness and operational discipline
Job Duties
- Create and evolve food menus in alignment with concept and seasonality
- Develop, test, and finalize recipes including specifications
- Build and maintain standardized recipe cards and plating guides
- Ensure food quality, consistency, and presentation standards
- Lead BOH operations during service and communicate with FOH leadership
- Manage daily prep lists, station responsibilities, and ingredient pars
- Write kitchen schedules and manage labor targets
- Hire, train, and develop BOH staff
- Manage ordering, vendor relations, and inventory
- Cost menu items, set pricing, and control food costs
- Ensure compliance with food safety and sanitation standards
- Maintain cleanliness, equipment, and BOH organization
- Coordinate menu rollouts, special events, and catering
- Collaborate with leadership on business goals and kitchen culture
- Oversee daily closing, reset, and operational discipline
