Sankyu Sushi is a warm and friendly Japanese Izakaya located in Mount Prospect, dedicated to providing an authentic dining experience that combines traditional Japanese flavors with a lively and inviting atmosphere. We are currently seeking an experienced and reliable Kitchen Chef / Sushi Chef to join our culinary team. This is a fantastic opportunity for someone who has a strong foundation in sushi preparation and Japanese cuisine and who thrives in a fast-paced, energetic restaurant environment. The role involves preparing and presenting high-quality sushi and other Japanese dishes consistently, maintaining the freshness and quality of ingredients, and supporting smooth daily kitchen operations. As a Kitchen Chef / Sushi Chef at Sankyu Sushi, you will be entrusted with crafting sushi, sashimi, nigiri, maki, and rolls that meet our stringent restaurant standards, while also assisting with cooked menu items such as frying, grilling, sauteing, sauce preparation, and plating. You will ensure the proper handling, portioning, and storage of fish and other ingredients to maintain peak freshness, as well as consistently prepare and season sushi rice to perfection. Maintaining cleanliness and organization of the sushi station, prep areas, and kitchen is essential to support efficient service and uphold health department guidelines.
This role requires strong knife skills, familiarity with Japanese cooking techniques, and a keen understanding of ingredient quality, especially regarding fish. You will work closely with the head chef, management, and fellow kitchen staff to deliver a seamless dining experience. Attention to detail, consistency, and composure during busy service hours are critical. Additionally, you will assist with inventory management, receiving supplies, and supporting special menu items and seasonal dishes. Communication skills and a professional demeanor are important as you interact with team members and occasionally with guests near the sushi counter or open kitchen.

Job Requirements
- High school diploma or equivalent
- prior experience in sushi preparation or Japanese cuisine
- strong knife skills
- knowledge of food safety and sanitation guidelines
- ability to work in a fast-paced environment

- physical ability to stand for long periods and perform repetitive tasks
- flexible availability including evenings and weekends
- willingness to support all kitchen duties and restaurant operations
Job Qualifications
- Prior experience as a sushi chef, kitchen chef, or Japanese restaurant cook preferred
- strong knife skills and knowledge of sushi, sashimi, nigiri, maki, and Japanese preparation techniques
- general cooking ability including prep, frying, grilling, sauteing, sauce preparation, and plating
- understanding of fish quality, proper handling, storage, breakdown, and portioning
- ability to prepare and season sushi rice consistently
- high standards for cleanliness, organization, and food safety
- ability to work efficiently in a fast-paced restaurant environment
- strong communication skills and ability to work well with the culinary team
- professional attitude, reliability, flexibility, willingness to follow direction
- must be willing to support the team and complete assigned tasks
- experience with izakaya-style food, Japanese small plates, or counter service is a plus
- leadership experience in a kitchen environment is a plus
Job Duties
- Prepare sushi, sashimi, nigiri, maki, rolls, and other Japanese dishes according to restaurant standards
- assist with cooked menu items including hot kitchen preparation, sauces, garnishes, frying, grilling, sauteing, plating, and prep work
- handle, break down, portion, and store fish with care and proper technique
- maintain quality, consistency, and presentation of all ingredients
- prepare and season sushi rice consistently
- keep sushi station, prep areas, and kitchen clean, organized, and properly stocked throughout service
- follow all food safety, sanitation, and health department guidelines
- work closely with the chef, management, and kitchen team to ensure smooth and timely service
- assist with daily prep, inventory, receiving, cleaning, and proper storage of ingredients
- support specials, seasonal dishes, and menu updates
- communicate professionally with team members and guests
- follow direction from chef and management
- maintain composure and attention to detail during busy service
- assist with any reasonable tasks to support the restaurant
