The Head Chef role at Target Hospitality is a critical leadership position responsible for overseeing the entire food service operation within a remote camp setting. This position reports directly to the Lodge Manager and is hourly compensated. As Head Chef, you are accountable for the proper and timely preparation of meals while supervising the kitchen staff to maintain high culinary standards. Your leadership will ensure that all food services align strictly with safety protocols, SOPs, JSA's, HACCP, and FIFO guidelines, supporting the company’s unwavering commitment to food quality and safety.

Your responsibilities will include coordinating the preparation, production, and serving of meals per the menu plans and chef’s specifications, ensuring adequate meal quantities and compliance with production quotas. You will manage stock levels, enforce proper food storage and rotation, and oversee the operation of various kitchen equipment, such as flat-top grills, industrial mixers, tilt skillets, steam kettles, and convection ovens. The role demands strong culinary expertise and a proactive approach in providing guidance, mentoring, and leadership to kitchen staff, including new employee onboarding and daily production meetings with the Chef.

Working at Target Hospitality requires physical stamina as this role involves standing for long hours, lifting heavy items, and operating machinery. The environment often includes exposure to extreme temperatures and requires a keen awareness of safety procedures. You will also hold daily safety meetings and participate in emergency response protocols, contributing to the company’s strong safety culture.

Ideal candidates will bring a minimum of three years of culinary experience in remote camps or hospitality sectors, exceptional communication skills, and solid leadership capabilities. A valid food safe certification and first aid certification are advantageous. This role also requires candidates to pass background checks and urine analysis and be able to travel long rotations away from home, demonstrating flexibility and dedication.

Job Requirements

  • Must provide own transportation to and from facility

Job Duties

  • Maintain a safety culture following all SOPs, JSAs, policies and procedures
  • Coordinate handling, preparation, production, and timely service of all meals
  • Supervise kitchen staff involved in meal preparation and serving
  • Prepare meals according to menu plans and chef specifications
  • Ensure proper food storage, rotation, and discard expired items under HACCP and FIFO guidelines
  • Operate kitchen equipment including flat top grills, industrial mixers, tilt skillets, steam kettles and convection ovens
  • Provide culinary guidance and leadership to team members and new employees
  • Assist Chef with team review process
  • Meet daily with Chef to discuss menu preparation and production strategy
  • Manage stock levels to maintain at least a two-week supply
  • Run daily safety meetings with staff
  • Attend safety meetings and participate in emergency response procedures
  • Perform additional duties as assigned by supervisor or manager
