This role offers an exciting opportunity to work within this lavish and unique environment as an Assistant to the Sommelier. The candidate will play an integral part in coordinating and developing the resort’s wine lists and product selections to maintain top quality standards, ensure profitability, and enhance guest satisfaction. The position demands a balance between operational oversight and a deep knowledge of wine service. The successful candidate will assist the Sommelier in managing daily beverage service, overseeing proper wine selection and inventory control, and ensuring adherence to the high standards the Fontainebleau brand is synonymous with. Furthermore, this role involves supervising and training the beverage service team, scheduling labor, handling guest concerns, and stepping in as the Sommelier when necessary. This is a highly responsible position that requires excellent communication skills, the ability to build strong relationships with both staff and guests, and a passion for delivering a superior guest experience through exceptional wine service.

Job Requirements

  • High school education or equivalent
  • Minimum of 1-3 years of relevant experience in high quality, high volume establishments
  • Familiarity with wine service concepts, practices, and procedures
  • Familiarity with food service practices and procedures
  • Ability to communicate effectively and establish and maintain effective working relationships with staff

Job Duties

  • Assist the Sommelier to oversee the daily beverage service operations and ensure quality standards for wines
  • Work with Sommelier to assure proper selection, costs, and inventories of all wines
  • Monitor inventory levels, bar equipment, and other supplies as needed
  • Resolve guest concerns and implement resolutions
  • Schedule labor force and assign work for beverage service team
  • Plan, manage, and monitor work as well as training, communicating, coaching staff, and building relationships
  • Assume Sommelier responsibilities during absence
  • Perform other related duties as assigned
