Job Description
Fontainebleau Miami Beach is a legendary oceanfront resort located on Collins Avenue in the heart of Millionaire's Row. Originally opened in 1954 and designed by the famed architect Morris Lapidus, the hotel is renowned for its striking design blending Golden Era glamour with modern luxury. Over the decades, Fontainebleau has become one of the most historically and architecturally significant hotels in Miami Beach, a place where architecture, contemporary art, music, fashion, and technology converge to create a vibrant and unique guest experience. The resort offers an expansive array of amenities and experiences, including dining, shopping, spa services, and sophisticated entertainment that invite guests to fully immerse themselves in whatever defines their perfect day.
As a part of Fontainebleau Miami Beach's dedicated culinary team, the role of the Assistant Chef de Partie is instrumental in maintaining the high standards the property is known for. This position plays a key supporting role to the Chef de Partie by executing essential kitchen duties that ensure smooth daily operations within the culinary department. Working in an environment known for its high volume and multi-unit operations, the Assistant Chef de Partie contributes to delivering exceptional food quality and consistent guest satisfaction.
This employment opportunity offers a highly competitive hourly wage combined with a comprehensive benefits package, making it an attractive option for culinary professionals seeking to develop their careers within a luxury hospitality setting. Individuals in this role are expected to adhere strictly to food safety guidelines, particularly those outlined by the Hazard Analysis Critical Control Point (HACCP) program, ensuring that all food preparation meets regulatory standards for sanitation and safety.
In this role, the Assistant Chef de Partie prepares mise-en-place for daily cooking operations, reviews recipes, measures ingredients, and prepares all necessary equipment in advance. The position also involves handling and preparing various food items such as fruits, vegetables, salads, and fish with precision and care. Maintaining cleanliness and hygiene within designated kitchen areas is a critical responsibility, including the cleaning of refrigerators, utensils, kitchen equipment, and trolleys on a daily basis. Additionally, the assistant supports inventory management by collecting products from stores in accordance with HACCP and company policies.
This hands-on role offers individuals the opportunity to work closely within a collaborative culinary team at a premier destination, as well as the chance to hone skills within a high-quality, high-volume kitchen operation. Those who succeed in this challenging but rewarding environment demonstrate not only culinary competence but also the ability to work effectively with management, colleagues, and guests. Fontainebleau Miami Beach fosters a culture that values excellence, innovation, and the unique contributions of each team member, making it an inspiring place to grow and thrive professionally.
