This role is for a skilled Meat Cutter who will be responsible for accurately trimming and cutting meat products according to specific yield and trim specifications outlined in cutting tickets. The Meat Cutter will play a crucial role in maintaining product quality and inventory accuracy by carefully following cutting instructions and managing raw materials and pre-cut inventory based on code dates. Attention to safety and proper labeling is a key aspect of this position, ensuring compliance with all legal regulations and company safety protocols. The role also involves recording detailed data for cutting yield tests, maintaining proper inventory levels, and assisting with equipment assembly, disassembly, and maintenance.

Candidates will be expected to manage product profitability through efficient yield management while adhering to stringent U.S.D.A guidelines. Physical demands include lifting heavy items between 50 to 60 pounds and working in a refrigerated processing environment with exposure to cold, wet conditions, and high noise levels. The successful candidate must be physically capable of standing, stooping, and climbing throughout their shift and possess good vision capabilities, including color vision, and the ability to use sensory skills such as smell to assess product quality. Beyond technical skills, the role requires strong communication abilities in English, a commitment to teamwork, adaptability to changing operational goals, and a customer-service-oriented mindset. Candidates will also participate actively in the company’s safety program, helping to develop and adhere to safe work practices and reporting any unsafe conditions immediately.

Job Duties

  • Accurately cut to trim and yield specifications

  • Pull raw materials and pre-cut inventory according to code dates
  • Properly label all products and equipment

  • Count and maintain product inventory levels
  • Ensure all product specifications are met
  • Maintain work areas according to U.S.D.A guidelines
  • Assemble and tear down equipment as needed
  • Properly clean, store and maintain knives and scales

  • Complete other duties as assigned
