Job Requirements
- High school education or equivalent
- one to two years of related employment experience
- knowledge of cooking practices and kitchen procedures
- ability to perform non-repetitive analytical work
- physical ability to lift up to 70 lbs
- ability to climb and bend knees regularly
- ability to stand for long periods
- ability to hear and communicate effectively
- ability to see that product is prepared appropriately
- ability to follow verbal and written instructions

Job Duties
- Ensure proper service from the front line through quality control
- train line cooks and ensure proper sanitation levels
- check all items against recipe cards
- verify use records for all items served
- ensure food is presented efficiently and with quality
- monitor line setup prior to meal functions for efficiency
- oversee equipment maintenance and enforce kitchen clean-as-you-go policy
- prepare food of consistent quality following recipe and portion standards
- start food items prepared ahead without excess
- date and rotate food containers per SOP
- maintain proper temperatures for perishables
- check pars for shifts and determine preparation needs
- note out-of-stock items or shortages
- assist in keeping buffet stocked
- return unused food items to storage properly dated and covered
- assist in correcting food cost problems and control food waste, loss, and usage per SOP
