The Manager in Training (MIT) position at Pollo Nation is a dynamic and comprehensive role designed to equip aspiring leaders with the skills and knowledge necessary to take on future leadership responsibilities within the company. This role offers hands-on experience across all facets of restaurant operations, including food safety, guest service, labor management, team development, and financial performance. Working closely with the Training General Manager, Field Training Manager, and the broader leadership team, the MIT will learn how to lead effectively, uphold the highest operational standards, and cultivate a high-performance culture.

The MIT will be responsible for managing day-to-day restaurant activities while being fully engaged in the development of a team of over 25 employees. This includes ensuring food quality, safety compliance, cleanliness, and consistent service and presentation standards. Additionally, the MIT will play a crucial role in fostering team engagement through coaching, accountability, and supporting the implementation of guest experience initiatives to enhance customer satisfaction. This role requires adaptability, a positive attitude in a fast-paced environment, and the ability to make sound decisions under pressure.

Furthermore, the MIT will gain valuable experience in operational tasks such as scheduling, inventory management, payroll processes, fund handling, and financial reconciliations. The role also involves participation in hiring, onboarding, and training both hourly employees and future managers, which helps build leadership capabilities. Maintaining a safe and inclusive workplace is a top priority, with attention to incident reporting and adherence to safety protocols. Job Requirements

  • High school diploma or GED required
  • 3-5 years of experience in the restaurant industry with at least 2 years in a supervisory or leadership role
  • ServSafe Certification required
  • Proficiency with technology systems including HRIS platforms Outlook and internal company tools
  • Strong verbal and written communication skills in English
  • Proven leadership ability team development experience and a passion for operational excellence

Job Qualifications

Job Duties

  • Oversee day-to-day restaurant operations ensuring food quality safety cleanliness and consistent service and presentation
  • Support a high-performing team culture through ongoing coaching engagement and accountability
  • Model and coach hourly team members and managers in delivering exceptional guest service and addressing guest concerns with urgency and care
  • Supervise and assist in leading a team of 25+ employees ensuring adherence to company and regulatory standards
  • Conduct daily pre-shift meetings to align teams on goals service standards and operational updates
  • Assist in scheduling inventory ordering payroll fund handling and reconciliation processes
  • Participate in hiring onboarding training and developing both hourly team members and future leaders
