The Manager in Training (MIT) position at Pollo Nation represents an exciting opportunity for individuals eager to build a career in restaurant management through hands-on experience and comprehensive training. Designed to groom future leaders, this role provides exposure to all facets of restaurant operations including food safety, quality control, guest service, labor management, and team leadership. Working closely with the Training General Manager, Field Training Manager, and broader leadership team, the MIT will gain valuable insights into managing a high-performing team of over 25 employees while maintaining operational excellence and adhering to company standards.
This role is ideal for motivated individuals passionate about the food service industry and leadership who are looking for a structured pathway into managerial roles. The MIT will be immersed in the day-to-day activities critical to running a successful restaurant, from scheduling and inventory management to payroll and compliance with safety regulations. In addition to operational duties, the MIT will lead by example in delivering outstanding guest experiences, quickly resolving any customer concerns with care and professionalism. Candidates should have a minimum of a high school diploma or GED, with 3 to 5 years of experience in the restaurant industry, including at least 2 years in supervisory or leadership roles. Required certifications include ServSafe, and proficiency with HRIS systems and other internal company tools is highly valued. The physical demands are typical of a restaurant setting, and the working environment is temperature controlled with a low to moderate noise level to ensure comfort and efficiency.

Job Duties
- Oversee day-to-day restaurant operations ensuring food quality safety cleanliness and consistent service and presentation
- Support a high-performing team culture through ongoing coaching engagement and accountability
- Model and coach hourly team members and managers in delivering exceptional guest service and addressing guest concerns with urgency and care
- Supervise and assist in leading a team of 25+ employees ensuring adherence to company and regulatory standards
- Conduct daily pre-shift meetings to align teams on goals service standards and operational updates
- Assist in scheduling inventory ordering payroll fund handling and reconciliation processes
- Participate in hiring onboarding training and developing both hourly team members and future leaders
- Monitor labor and financial performance and help drive achievement of key targets sales labor transactions and EBITDA
- Maintain facility cleanliness and equipment functionality report any issues promptly
- Ensure timely and accurate incident reporting compliance with all safety protocols and maintenance of a safe inclusive work environment
- Support the implementation of guest experience initiatives to improve customer satisfaction and social review performance
- Embrace change with a positive attitude and adaptability in a dynamic environment
- Make sound decisions under pressure and help navigate operational challenges
- Perform other duties as assigned in alignment with company policies and procedures
