The Dining Hall Manager role within R&DE is a vital leadership position reporting to the Senior Director of Student Dining. This role is designated essential and requires on-site presence, including working weekends and dinner service hours. The Manager is responsible for overseeing daily operations of residential student dining meal programs and late-night retail services within a designated dining hall. They ensure food quality, service excellence, cleanliness, and operational reliability align with Stanford’s standards. A key focus is delivering a dining experience that supports student success, well-being, and community connection.
The manager leads and develops frontline teams by managing staffing, training, and operational flow to meet student demand across all meal periods. This includes real-time problem-solving, responding to student feedback, and ensuring compliance with all applicable food safety, ADA, and university policies. Beyond daily management, the Dining Hall Manager actively drives financial and operational goals by controlling labor, food costs, and waste. Other responsibilities include business optimization through data analysis to guide operational decisions, contributing to strategic goal setting, talent management, and local marketing initiatives. Job Requirements
- Bachelor's degree in institutional management, nutrition, dietetics, or hotel hospitality
- Five years of institutional, hotel, or restaurant food service facility management experience
- Large quantity production culinary skills
- Experience managing unionized employees
- Proven track record of successfully controlling costs and managing annual budgets exceeding one million dollars
- Proficiency with computerized culinary and menu management software
- Knowledge of office and industry software applications
- Ability to work independently with creativity and initiative
- Ability to supervise and train diverse work staff

Job Duties
- Execute a high-quality daily dining experience by consistently meeting standards for food quality, presentation, and hospitality while achieving unit-level student satisfaction targets
- Deliver strong student engagement by maintaining high participation rates, responding to feedback, and creating a welcoming inclusive dining environment
- Ensure compliance and operational integrity by meeting all food safety, ADA, and university standards and effectively implementing accommodations within the dining hall
- Achieve financial and operational targets by managing labor, food cost, and waste within established benchmarks including cost per meal and labor efficiency
- Maintain excellence in service execution across all meal periods, including late-night retail, ensuring proper staffing, throughput, and service consistency
- Perform general management duties focusing on controlling revenue and expenses and provide strategic input into short and long term goals and talent decisions
- Uphold customer service standards by receiving and resolving customer inquiries, concerns, and complaints and perform daily interactive customer discussions
- Contribute to business optimization by compiling and analyzing data and reports to guide operational decisions ensuring budgetary goals are met and balancing customer service with labor, cost, and food quality goals
- Optimize employee relations by participating in interviewing, hiring, training, counseling, mentoring, and evaluating all levels of staff
- Lead local menu and marketing development by suggesting marketing strategies and features, overseeing implementation, collaborating on innovative programs, and planning special events
- Lead health and safety standard compliance by conducting regular food quality, merchandising, sanitation, equipment maintenance, safety practices, and staff and facility appearance inspections
