Crucial skills include expertise in profit and loss (P&L) management, with the ability to recall key financial metrics such as food costs, labor percentages, and comparable sales trends from memory. This knowledge ensures that managers can make data-driven decisions to optimize profitability while maintaining high standards of food safety, cleanliness, and customer service.
