Job Description

Five Star is a leading family entertainment and casual dining operator with a footprint spanning eleven brands, twenty-seven locations, and thirteen states. Joining Five Star as a General Manager means stepping into a dynamic, fast-paced, and multi-revenue line role that expands well beyond the traditional restaurant environment. The General Manager is the ultimate leader of each site, accountable for the entire operation, encompassing full profit and loss ownership, overseeing front of house (FOH), back of house (BOH), attractions, games, retail, parties, and corporate events. This leadership role involves owning the financial, operational, and customer experience aspects of the business, requiring a hands-on management style with more than 70% of the work spent on the floor engaging with team members and guests directly.

The scope of responsibility includes mastering and managing prime cost, labor percentages, food and beverage costs, controllables, and EBITDA alongside multiple revenue centers, ensuring productivity and profitability in all areas. General Managers are expected to use their expertise in P&L management, team leadership, forecasting, scheduling, inventory management, and vendor relations to operate a high-volume casual dining and entertainment complex with Olive Garden-like volume and a Dave & Buster’s style mix.

Five Star’s General Managers lead both salaried managers and large hourly crews, fostering a culture of developing young talent, many of whom are teenagers or college students taking their first step in the workforce. The ability to coach, motivate, and promote these hourly team members is critical, as is maintaining strict adherence to brand standards, service quality, speed of service, and safety protocols. Daily responsibilities include leading pre-shift meetings, running expo during busy times, managing guest recovery, and meticulously hitting secret shop scores, NPS, and Google review targets to ensure an exceptional guest experience.

Job Requirements

Job Qualifications

  • Five or more years as a general manager or strong assistant/senior assistant general manager in casual dining, polished casual, family dining, fast casual, eat-ertainment, or hotel food and beverage
  • experience managing multi-revenue-line operations is a plus
  • strong financial literacy including P&L management, labor planning, budgeting, and variance analysis
  • proven leadership skills with a track record of developing and retaining team members
  • commitment to brand standards, speed of service, and exceptional guest experiences
  • calm and effective problem-solving abilities in high-pressure situations
  • availability to work nights, weekends, holidays, and peak seasons
  • technology proficiency with POS systems like Aloha, Toast, Micros, NCR, scheduling software such as HotSchedules, 7shifts, UKG, inventory management, and Microsoft 365
  • bonus points for experience with redemption/arcade systems such as Embed, Intercard, Sacoa

Job Duties

  • Own full P&L including revenue, food and beverage costs, labor, attractions revenue per cap, games per cap, prize cost, R&M, and EBITDA
  • build accurate forecasts and budgets
  • defend variance
  • find basis points
  • partner with corporate accounting on payroll accuracy, vendor invoices, and period-end close
  • manage inventory across food, beverage, retail, redemption prizes, and game cards/wristbands
  • recruit, hire, onboard, and develop a salaried management team and a 40-150+ hourly crew
  • run a tight meeting cadence including daily pre-shifts, weekly manager meetings, monthly business reviews, and quarterly planning
  • coach with specifics, praise loudly, correct privately, and document everything
  • build a bench for assistant manager promotions
  • walk the floor every shift engaging as both GM and guest
  • own service recovery fast, generous, on-brand, and on your watch
  • hit secret shop scores, NPS, and Google review targets
  • conduct daily walk-throughs against Safe Clean Fun standards
  • oversee weekly audits, monthly deep cleans, and quarterly safety drills
  • manage food safety (ServSafe), responsible alcohol service (TIPS or state equivalent), and attraction safety protocols
  • partner with corporate Games & Amusements and Tech Services teams to keep attractions operational and profitable
  • act as the face of the park in the local market including schools, leagues, chambers, youth sports, local press, and radio
  • partner with corporate Marketing and Regional Director of Sales to drive group bookings, parties, and corporate events
