The position available is for a Cook within Harvard University Dining Services (HUDS). This role involves preparing and cooking menu items according to standardized recipes and proper cooking methods, typically in small batches or as needed to meet business requirements. The Cook plays a key role in maintaining food quality standards by tasting and evaluating all dishes before service and consulting management if any concerns arise. This position requires delegating production tasks to the culinary team respectfully and assisting in catered event preparations, sometimes leading events under the guidance of the Second Cook or Manager-in-Charge.

The Cook ensures the kitchen is adequately stocked and may work with the Storekeeper to maintain inventory. Proper use and instruction on kitchen equipment are essential components of the role. Training entry-level kitchen staff such as Assistant Cook, Short Order Cook, Grill Cook, and Kitchenperson/Chef’s Helper also fall under the responsibilities. Food preparation techniques include frying, grilling, sautéing, roasting, baking, braising, and steaming. The Cook must ensure all food products, including soups and sauces, reach appropriate serving temperatures and may be required to carve or slice meat both behind the scenes and at front-of-house stations.

Sanitation and safety procedures are critically important, and the Cook must follow the 'Clean as you go' philosophy to maintain a sanitary and organized workspace. Documentation of food portions, sanitation logs, and temperature records is required, with any necessary corrective actions promptly reported to management. Compliance with Massachusetts state regulations and Harvard’s environmental health and safety policies is mandatory.

Effective communication and cooperation with staff, management, and guests in a respectful manner are vital to success in this role. The role supports the mission and core values of Harvard Dining Services by promoting a spirit of enthusiasm and collaboration. Training sessions and certification maintenance, including ServSafe certification, are part of ongoing professional development.

This part-time position offers a flexible work schedule totaling 27 hours weekly, including weekend shifts. Compensation ranges from $29.07 to $31.08 per hour, reflecting the level of expertise required. Job Duties

  • Prepares and cooks menu items according to proper preparation methods in small batches or as required by business needs
  • reads and follows standardized recipes
  • delegates production of menu items to culinary team in respectful manner
  • tastes and evaluates all food before service to ensure food quality standards are met and consults manager with any concerns
  • assists culinary team in the preparation and presentation of catered functions and may take the lead on events under guidance
  • ensures kitchen is properly stocked and may provide written requisitions or direction to Storekeeper
  • instructs kitchen personnel in proper usage of kitchen equipment
  • assists with on-the-job training for Assistant Cook, Short Order Cook, Grill Cook and Kitchenperson/Chef’s Helper
  • fries, grills, sautés, roasts, bakes, braises and steams food products as directed
  • heats soups, sauces and prepared products ensuring they have reached appropriate temperature
  • carves or slices meat for service both back-of-house and front-of-house
  • maintains a clean and organized work space following a clean as you go philosophy
  • leaves work station clean and restocked, recycles products per policy
  • accurately records portion amounts during meals on service records
  • cools, refrigerates, labels and properly stores food according to HACCP procedures
  • fills out sanitation and temperature logs and food service records accurately and informs person in charge when corrective action is needed
  • follows sanitation standards following regulatory agencies and Harvard Environmental Health and Safety regulations
  • communicates effectively and works cooperatively and respectfully with staff, management, and guests
  • complies with State of Massachusetts and Dining Services Food Employee Illness Policy
  • represents HUDS positively and professionally
  • works to meet mission and core values of Harvard University Dining Services with enthusiasm and cooperation
  • attends all assigned trainings
  • maintains current certifications as required
  • performs other duties as assigned
