The role of Pastry Chef at DO & CO is a vital position within the culinary team, reporting directly to the Executive Pastry Chef. This role is dedicated to creating high-quality pastry items using standardized recipes and presentation techniques to maintain the company’s quality and consistency. Responsibilities include baking traditional confections, assisting with production, and ensuring cleanliness and hygiene in the pastry and bakery sections. The Pastry Chef plays an integral role in managing daily pastry preparation and production aligned with airline specifications and DO & CO's standards, contributing to the company’s reputation for culinary excellence.
This position requires creativity and skill in baking techniques such as prepping, melting, measuring, tempering, baking, whipping, icing, layering, juicing, and decorating. The Pastry Chef also monitors wastage, completes assigned tasks efficiently, and adheres to stringent deadlines. Additionally, the role involves reviewing menu specifications and coaching team members to ensure adherence to quality and operational standards. The Pastry Chef supports cost control through effective purchasing and monitoring wastage, while also motivating and developing team members’ skills. Compliance with food safety and hygiene regulations is a critical part of the job, and any issues must be promptly reported to management and the hygiene team.

Job Duties
- Assist in managing the daily preparation and production of all pastry food according to airline specification and DO & CO standards
- Monitor wastage and complete assigned tasks within the given time in order to meet strict deadlines
- Demonstrate creative baking techniques such as prepping, melting, measuring, tempering, baking, whipping, icing, layering, juicing and decorating
- Review menu specifications and ensure all pastry team members are following the guidelines
- Maintain food cost levels through purchasing and wastage control
- Motivate, train and develop team members’ skills and assist Pastry Sous Chef and Executive Pastry Chef as assigned
- Comply with all food safety and hygiene regulations as stated in the food safety management system handbook
- Report problems with the food safety management system to their manager and the hygiene and food safety team
- Ensure adequacy of supplies at the cooking stations
- Store ingredients and food items according to food safety standards and follow the guidance of the executive pastry chef and Pastry Sous Chef
- Help to maintain a climate of smooth and friendly cooperation
- Perform other duties as assigned
