The Full-Time Production Kitchen Manager position at Aztec Shops offers an engaging leadership role within a fast-paced, high-volume food service environment. This position is responsible for managing and developing a production unit's operations staff, including 1 to 5 crew leads or supervisors and roughly 2 to 20 employees. The Production Kitchen Manager plays a vital role in coordinating all aspects of daily kitchen operations, ensuring smooth workflow, quality control, and compliance with health and safety standards.
The role includes overseeing hiring, training, coaching, and disciplining employees as well as setting work priorities and conducting staff meetings. The manager will be involved in preparing and managing the annual operating budget, assisting with forecasting and planning to meet profit and growth goals. Daily operational adjustments based on production volume, maintaining cleanliness and organization, and ensuring inventory accuracy are also key responsibilities.
Additional duties include reviewing catering contracts to verify product quality and consistency, managing food requisitions through inventory systems, and assisting with new product development in line with profitability targets. Exceptional customer service is expected, with the manager resolving complaints and establishing a positive guest relations example. The manager is also responsible for regulatory compliance involving food handling, sanitation, and internal controls.

Job Duties
- Manages and develops production unit's operations staff including hiring, coaching, training and disciplining of employees

- assists Executive Chef with new product development focusing on quality and profitability
- resolves customer issues and complaints
- monitors compliance with inspections, handling and storage of inventories
- trains employees on equipment use and cleaning
- submits work orders to maintain operational facility
- complies with company policies and legal regulations
- performs other duties as assigned
