Job Description
Delaware North Gaming, a division of Delaware North Companies, is currently seeking a full-time Cook 3 to join the team at Southland Casino Hotel located in West Memphis, Arkansas. Delaware North is a global hospitality and food service company with over 100 years of history, operating in various iconic venues including sports arenas, national parks, casinos, hotels, and more. Southland Casino Hotel features more than 2200 slot machines, as well as live blackjack, craps, and roulette tables, simulcast wagering, and a sportsbook. The newly added hotel at Southland boasts 300 luxurious rooms and suites, offering guests a premier entertainment and accommodation experience in the vibrant West Memphis area, just minutes from downtown Memphis, Tennessee. The casino environment thrives on delivering exceptional guest experiences, which depend heavily on the dedication and skill of its food service and operations teams.
The Cook 3 role at Southland Casino is a vital leadership position within the kitchen, responsible for cooking and food preparation while assuring quality and safety standards are met. This position requires a strong culinary skill set combined with the ability to lead and train kitchen staff, oversee menu planning, manage kitchen operations, and maintain compliance with all health and sanitation regulations. This role also involves operational responsibilities such as monitoring food quantities, controlling labor and overhead costs, and ensuring that food presentation adheres to brand and quality standards. The Cook 3 is seen as a visible leader in the kitchen, working closely with management and team members to meet and exceed guest expectations.

Shifts offered are diverse and include day, evening, split, overnight, and weekend schedules with opportunities for overtime and on-call assignments. Job Requirements
- At least 2 years of previous experience in a back-of-the-house foodservice position
- Ability to read and comprehend prep sheets and recipes
- Basic math skills
- No high school diploma or GED required
- Ability to lift up to 50 lbs
- Ability to stand and walk for entire shifts
- Manual dexterity to chop, mix, and operate kitchen equipment
- Comfortable working in variable temperatures

- Review menus and customer orders to prepare food accordingly

- Use waste control guidelines and document spoilage
- Perform opening, closing, and side work duties including end-of-day inventory
