The role of Food Service Manager within the Cumberland County Jail is a full-time, essential position responsible for managing the foodservice program according to federal, state, and County policies and procedures. The position plays a critical role in ensuring that inmates receive nutritious, well-balanced meals that meet stringent sanitary and dietary standards. The manager is tasked with supervising meal preparation and kitchen operations, maintaining food inventory, procuring supplies, ensuring kitchen safety, and controlling costs associated with foodservice. This position requires a combination of culinary skill, institutional management experience, and strong supervisory capabilities.

The Food Service Manager oversees the preparation of three meals daily, including special diet meals, adhering to procedures that comply with American Correctional Association standards and Maine jail certification requirements. They ensure that the kitchen operates with high sanitary standards, maintaining cleanliness and proper handling of foodstuffs with a strict first-in, first-out inventory rotation. The manager also handles procurement duties, including the identification and negotiation with suppliers to maintain cost-effective purchasing consistent with budgetary constraints. Additionally, the manager supervises inmates engaged in food preparation, ensuring security and safety protocols are rigorously followed.

The responsibilities extend beyond daily meal operations to include maintaining emergency food inventories to feed the jail population for two weeks, documenting incidents within the kitchen, coaching and disciplining kitchen staff, and supporting law enforcement events by managing food service during these occasions. The Food Service Manager contributes to ongoing improvements by recommending operational and purchasing enhancements to support services leadership. Further, they maintain professional knowledge through educational workshops and participation in professional societies, thereby elevating the standards of institutional foodservice management in the correctional setting. This position is compensated at $34.74 per hour and includes a full benefits package. Job Requirements

  • High school diploma or equivalent
  • Must be able to lift, carry or move 50 pounds
  • At least 2 years secondary education in Culinary Arts
  • At least 5 years in institutional meal planning and preparation
  • Thorough knowledge of sanitary food preparation
  • Knowledge of large institutional kitchen operations
  • Knowledge of care and sanitation of kitchen equipment
  • Excellent supervisory skills
  • Previous supervisory experience preferred
  • SERV Safe Certification desired
  • Must be authorized to work in the U.S.

Job Duties

  • Ensures proper meals for inmates by preparing and supervising the preparation of three meals daily, including special diet meals
  • Meets all sanitary standards by maintaining a clean and orderly kitchen and ensures compliance in all phases of food preparation
  • Maintains fresh foodstuffs by providing proper storage, putting away stock in proper storage, rotating stock in store room and freezer to ensure first in, first out use of stock
  • Maintains foodstuffs by checking stock to determine inventory level, anticipating needed foodstuffs and supplies, placing and expediting orders and verifying receipt of supplies and food supplies
  • Purchases foodstuffs and supplies by identifying and qualifying suppliers, negotiating prices, estimating food supplies needed and placing and expediting food orders
  • Ensures a flexible rotating menu by allowing for an increase or decrease in jail population and maintaining recipes for every item on the menu
  • Ensures proper security by supervising inmates engaged in food preparation being trained, serving, and cleaning
  • Provides business manager cost per meal by keeping a running total as to the amount of meals served
  • Maintains emergency inventory by stocking enough supplies to feed population for two weeks
  • Attempts to improve the food service operation by recommending improvements and making purchasing recommendations other than foodstuffs
  • Ensures security by maintaining accounting for knives, meat forks, and related items at all times using established accounting procedures
  • Maintains a safe, clean working environment by operating the kitchen in accordance with established policy, certification standards, and departmental SOPs
  • Assists in the success of Sheriff events, training sessions, and meetings by assisting in preparation and serving of meals and snacks and clean-up
  • Ensures documentation of any problems by writing incident reports on incidents occurring in the kitchen
  • Maintains kitchen staff job results by coaching, counseling, and disciplining staff, planning, monitoring and appraising job results
  • Maintains professional and technical knowledge by attending educational workshops, establishing personal networks, and participating in professional societies
  • Contributes to team effort by accomplishing related results as needed
  • Supports the Sheriff's safety and health policies by attending safety training programs, reporting accidents and suspected hazards
  • Fulfills job function by participating as an active member in training, Sheriff task forces, and performing other assigned responsibilities
