The Food Service Worker position at Kentucky Correctional Institution for Women, operated by Aramark, plays a vital role in overseeing meal preparation and food service within a correctional environment. This is a supervisory role where the individual is responsible for supervising inmates to ensure that meal preparation adheres strictly to production plans and Aramark standards. The Food Service Worker trains inmates in proper food preparation methods, assigns tasks, and coordinates daily work activities to maximize operational efficiency in the facility's food service area.
The role requires ensuring compliance with sanitation guidelines and safety regulations to maintain a clean and safe food service environment. Key responsibilities include reviewing and approving production and temperature logs, supervising food preparation and tray assembly, ensuring meals are served timely and meet dietary specifications, and maintaining security protocols including controlled access to storage and kitchen areas. This position also involves inventory management, food requisition, and ensuring adherence to HACCP standards regarding safe food handling and storage.
Candidates for this position should have the ability to motivate and supervise inmates, demonstrating sound judgment and tact while working independently with limited supervision. The role requires a food safety certification, previous food preparation or related experience, and is best suited for individuals with prior supervisory experience and familiarity with correctional facility environments. Physical demands of the role may include lifting, bending, pushing, pulling, and extended periods of walking or standing. The position also requires compliance with correctional facility security clearance standards and the use of personal protective equipment when necessary.

Job Requirements
- High school diploma or equivalent
- must be over 18 years of age
- minimum one (1) year experience in food preparation or related field preferred
- food safety certification or ability to obtain certification
- previous supervisory experience preferred
- ability to pass correctional facility security clearance
- physical ability to lift, bend, push, pull and stand for extended periods
- ability to work independently with limited supervision
- adherence to safety and sanitation guidelines
- reliable and punctual work ethic
Job Qualifications
- Must be over 18 years of age
- minimum of one (1) year of food prep or related work preferred
- previous supervisory experience preferred
- previous experience interacting with inmates a plus
- ability to motivate and supervise inmates and/or team members to attain quality and quantity of food production in a correctional work environment
- must be able to obtain a food safety certification
- ability to work independently with limited supervision
- ability to exercise good judgment and tact
- must be able to follow basic safety procedures and policies
- must qualify for and maintain correctional facility security clearance
Job Duties
- Adhere to and maintain preparation and production guidelines according to Aramark standards by reviewing and approving production and temperature logs
- supervise inmates in food preparation and tray assembly
- ensure timely, efficient meal service and all Aramark guidelines are being met
- participate in preparation and serving of meals
- print and distribute recipes
- direct inmates in the use of Aramark recipes and train on proper cooking procedures
- ensure proper portions and any special dietary requirements are fulfilled
- obtain accurate daily population counts and review with staff
- adhere to security policies and procedures
- ensure storage areas are locked at all times
- ensure that all kitchen tools and equipment are returned to their designated secure area
- ensure all keys are returned and secured
- determine work procedures, prepare work schedules and sanitation schedules while ensuring that cooks, inmates and/or food service workers adhere to the assigned schedule
- assist in conducting inventory, properly receiving, and storing food and food related items
- requisition orders as needed for approval
- participate in the preparation/5 Ps (Participation, Pulls, Production, Portion Control, and Postproduction), storage and assembly of meals and food items
- follow the Company's standard of operation for food handling and storage
- follow HACCP policies and procedures regarding proper food handling procedures
