Job Duties

  • Supervise inmate labor and team members in the kitchen during food preparation and service shifts
  • Prepare, assist, or instruct inmate labor and team members in preparing quality foods according to menu plans and recipes
  • Ensure proper and sanitary food storage
  • Serve food according to scheduled meal times and department policies
  • Use kitchen utensils and equipment correctly to cook and serve food portions meeting nutritional requirements
  • Follow food safety regulations related to sanitation, handling, and storage
  • Train other food service workers
  • Maintain cleanliness of work environment including refrigerators, cooking, and serving equipment
  • Enforce facility uniform policy
  • Manage garbage collection and keep kitchen floors clean
  • Ensure readiness of the kitchen environment for food preparation and serving including sweeping, mopping, and dishwashing
  • Review portions and utensils to ensure proper service
  • Promote a healthy and safe work environment
  • Perform physical activities such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
  • Stand for majority of scheduled shifts
  • Perform additional duties as assigned
