The role available is for a vital position focused on food safety and meal assembly within the medical center's nutrition services team. This full-time, day-shift position, typically spanning 7.5 hours, involves ensuring the highest standards of food safety, quality, and sanitation, which are crucial components in patient care and satisfaction. The successful candidate will be responsible for inspecting work areas to remove outdated and mishandled food items, preparing and arranging food tray items according to menu instructions while adhering strictly to hygiene and safety standards. Maintaining proper food storage practices such as labeling, dating, and rotating stock using the FIFO method is key to preventing foodborne illnesses. Handling potentially hazardous foods with the correct temperature controls to avoid the Temperature Danger Zone (41°F–135°F) is a critical safety measure emphasized in this role.

In addition to food tray assembly, the candidate will operate and maintain kitchen equipment like plate warmers, steam tables, slicers, refrigerators, and freezers, always using appropriate personal protective equipment (PPE) for safety. Inventory management is another responsibility, including monitoring stock levels, notifying managers of shortages, and restocking workstations in compliance with par levels to avoid overstocking. Maintaining cleanliness and sanitation of all food prep areas, dish machines, delivery carts, and floors is imperative to uphold infection control standards.

Job Duties

  • Regularly inspects work area to remove outdated, expired, or mishandled food items
  • Prepares, portions, arranges, and labels food tray items according to menu instructions, hygiene, and safety standards
  • Maintains proper food storage practices, including labeling, dating, and rotating stock using FIFO (First In, First Out)
  • Adheres to procedures for handling potentially hazardous foods, ensuring they are not left in the Temperature Danger Zone (41°F–135°F)
  • Assembles patient trays accurately based on menu orders
  • Ensures all food items are presented neatly and meet dietary requirements
  • Operates and cleans kitchen equipment such as plate warmers, steam tables, slicers, refrigerators, and freezers
  • Uses proper PPE and vendor-supplied equipment when handling cleaning chemicals to ensure safety and correct concentration
  • Monitors inventory levels and promptly notifies the manager of low or out-of-stock items
  • Restocks workstations according to par levels to maintain adequate supplies without overstocking
  • Cleans work areas, including dish machines, food delivery carts, and floors, following established procedures
  • Maintains clean and organized food prep areas with fresh sanitizer buckets to prevent cross-contamination
  • Follows waste management and recycling protocols
  • Complies with all OSHA regulations and local, state, and federal mandates
  • Completes all required annual training on time
  • Stays informed about updates to policies, menus, recipes, and portioning procedures
  • Communicates any incomplete tasks or concerns to the manager before the end of the shift
  • Assists coworkers during low census periods by restocking, cleaning, and organizing
