The Food Service Manager-Float position reports to the Director of Food and Nutrition Services and is a 9.5-month term employment classified within salary level 11. The role is essential to the smooth functioning of cafeteria operations, ensuring that food services meet quality, safety, and nutritional standards while providing excellent service to students and staff. The manager plays an active role in training staff, providing technical guidance, monitoring food service lines, maintaining records with confidentiality, and managing the ordering and inventory of food supplies.
The job requires someone with a strong knowledge of nutrition standards, management principles, inventory control, and compliance with regulations. Candidates must have excellent interpersonal skills to maintain effective relationships with co-workers, vendors, students, parents, and other stakeholders. The manager is also responsible for food preparation tasks, reading and calculating recipes, and ensuring proper food storage and quality control. Job Requirements
- Must be able to pass a fingerprint and background clearance check
- must be able to obtain and maintain a Certified Food Service Manager's card within one month of employment
- may be required to lift and/or carry heavy bulky supplies, materials, equipment, food or service products weighing up to 50 pounds
- may be exposed to extreme temperature shifts while working in a kitchen and/or freezer
- may be required to work outside normal working hours
- may be required to travel to perform work functions
- must possess and maintain a valid Arizona driver's license
Job Qualifications
- High school diploma or GED
- five years of relevant, progressively responsible food service preparation, cooking, baking, kitchen management or closely related experience
- knowledge of applicable federal, state, county and city statutes, rules, regulations, ordinances and codes and PUSD policies and procedures
- knowledge of principles of management and supervision
- knowledge of principles of inventory control
- knowledge of nutrition standards and guidelines
- skill in reading, understanding, interpreting and applying relevant regulations and policies
- skill in following written formulas, recipes, and related cooking instructions
- skill in establishing and maintaining effective working relations with co-workers, vendors, students, parents and the public
- skill in basic addition, subtraction and multiplication
- skill in operating a personal computer with various software applications
Job Duties
- Leads the kitchen and personnel
- provides and/or recommends training
- coordinates schedules, prioritizes and assigns tasks and projects
- establishes performance measures, goals, objectives and priorities
- evaluates work performance
- provides feedback and technical guidance
- advises personnel of new or revised information
- reviews planned menus, schedules and related requirements
- oversees removal of food supplies, products, seasonings and other items from inventory
- initiates purchase and/or restocking of supplies and materials as required
- assigns, plans and supervises food preparation work
- performs a variety of food preparation tasks
- reads and calculates recipes, and cuts, chops, measures and prepares foods accordingly
- reviews and monitors food service lines
- observes operations and activities
- works with cooks and others to keep food available, stored and served at the correct temperature and in monitoring student portions
- reviews student eligibility for free or reduced cost meals
- maintains updated records and confidentiality of student eligibility
- directs and participates in cleaning and sanitation of kitchen, food preparation and other relevant areas
- cleans and sanitizes kitchen, food trays, utensils, floors, work stations, tables and other food service areas
- mops, uses autoscrubber and takes out trash
- breaks down tables after service
- determines compliance to established practices and procedures
- prepares food production worksheets
- reviews past records and files
- determines appropriate amount of food products and service items to order
- oversees and performs duties associated with handling, collecting, verifying, reconciling and depositing cash and other forms of payment
- reviews food products delivered
- determines adherence with and compliance to quantity and quality of ordered products
- initiates returns for unusable or unwanted products
- oversees and assists with storage of food products and supplies
- updates files and records of products received and utilized
- performs other duties as assigned or required
