The role of Food Service Manager at Four Seasons is a pivotal position, responsible for the day-to-day operations of The Merchant Room, a distinguished French-American steakhouse created in collaboration with Chef Gavin Kaysen. This upscale restaurant offers a unique blend of traditional steakhouse charm with refined French culinary influences, providing guests with a high-end dining experience that is both sophisticated and memorable. The Food Service Manager holds a critical leadership role in ensuring that the restaurant maintains its elevated standards and reputation for quality service.

This position demands a hospitality-focused leader with a visionary approach to service excellence and a deep passion for fine dining. The Food Service Manager oversees the selection, training, management, and development of the restaurant team, from supervisors to assistant managers. This leader actively participates in strategic planning and drives operational success by maintaining a presence on the floor, fostering a positive team environment, and addressing guest needs with professionalism and empathy. Attention to detail in food quality, presentation, and wine and spirit offerings is a key responsibility, alongside collaborative work with the culinary and food and beverage leadership teams.

Financial acumen is essential for this role, as the manager controls labor and operational costs through efficient scheduling, budgeting, procurement, inventory management, and cash handling. Furthermore, the Food Service Manager regularly evaluates the restaurant’s physical environment and equipment, implementing improvements to uphold the establishment’s high standards. Their role extends to assisting with service duties, ensuring cleanliness and safety, and creating a welcoming atmosphere for all.

Ideal candidates will have a formal education in hotel or restaurant management or equivalent experience, coupled with 2-3 years in a supervisory or assistant management role within food and beverage. Proficiency in technology relevant to food and beverage operations and fluency in English are required, along with flexibility to work varying shifts, including weekends and holidays.

Job Requirements

Job Duties

  • Engage with the prelaunch team
  • select, train, assess, lead, inspire, and manage all restaurant staff from supervisors to assistant managers
  • ensure compliance with cultural and service expectations
  • contribute to strategic planning and operational success
  • maintain strong visibility within the restaurant while appreciating the team
  • encourage positive guest interactions
  • address guest concerns, complaints, or special requests professionally and empathetically
  • ensure quality and presentation of all food items and components
  • offer expertise on wine and spirit selections for all meals
  • collaborate with Assistant Director of Food & Beverage, Director of Food & Beverage, Executive Chef, and Sous Chefs to design menus and curated wine selections
  • manage labor and operational costs through scheduling, budgeting, procurement, inventory control, and cash handling
  • review restaurant physical space and equipment to suggest improvements
  • assist in serving drinks efficiently and professionally
  • help maintain a clean, secure, and welcoming environment
