The Food Service Manager role at Four Seasons is a pivotal leadership position specifically focused on overseeing daily operations at The Merchant Room, an upscale French-American steakhouse developed in partnership with acclaimed Chef Gavin Kaysen. The Merchant Room combines classic steakhouse traditions with refined French culinary artistry, creating an elegant dining ambiance tailored for breakfast, lunch, and dinner services. This role demands a hospitality-driven leader with a profound appreciation for fine dining and a strong ability to lead a team in delivering polished, memorable guest experiences. This position requires active engagement with the prelaunch team, involving recruiting, training, and inspiring restaurant personnel from supervisors to assistant managers to uphold the highest cultural and service standards.
The Food Service Manager will be responsible for ensuring the quality and presentation of all food items while offering expert guidance on wine and spirits selections suited for an upscale clientele. Collaboration is critical, working closely with the Assistant Director and Director of Food & Beverage, Executive Chef, and Sous Chefs to design creative menus and curated wine offerings that ensure premium product quality at competitive prices. This role also involves managing labor costs, efficient scheduling, budgeting, strategic procurement, inventory control, and cash handling duties to maintain profitability and smooth operations.
Strong visibility on the restaurant floor is essential, encouraging positive guest interactions, addressing concerns with professionalism and empathy, and maintaining a welcoming environment for guests and staff. Additional responsibilities include periodic assessments of restaurant space and equipment to suggest improvements that enhance operational standards and aesthetics. The Food Service Manager will also directly assist with drink service to maximize customer satisfaction and help maintain a clean, secure environment.

Job Requirements
- degree in hotel or restaurant management or equivalent experience
- two to three years of supervisory or assistant manager experience in food and beverage
- proven leadership skills
- strong communication abilities
- ability to multitask in a fast-paced setting

- proficiency with food and beverage technology
- fluent in english
- availability for flexible shifts including weekends and holidays

Job Duties
- engage with the prelaunch team
- select, train, assess, lead, inspire, and manage restaurant staff including supervisors and assistant managers
