Job Description

SSA Group is currently seeking a Lead Cook to join their dynamic team. This role plays a crucial part in maintaining the high standards of the culinary operations at The Fresno Chaffee Zoo. Reporting directly to the Kitchen Manager(s) and Chef(s), the Lead Cook is responsible for overseeing the preparation of food both in the back of house (BOH) and on the line to ensure smooth daily restaurant operations. This position is ideal for an experienced cook who thrives in a fast-paced environment and is passionate about delivering warm, welcoming, and memorable dining experiences to guests. The Lead Cook will ensure that service standards related to quick service, food safety, quality, availability, merchandising, and guest service are consistently met.

The role involves managing food quantities for ongoing service, participating in safety protocols like temperature checks and waste rotation, and maintaining proper hygiene and safe food handling practices. Additionally, the Lead Cook supports operational needs by filling in gaps, assisting with dishwashing when necessary, and maintaining a clean and organized workspace. Effective communication with supervisors and food operations managers is essential to address any service or quality issues promptly. This position also demands an understanding of all menu items, pricing, and specials to provide accurate information to guests.

Candidates for this role should possess strong interpersonal and communication skills, problem-solving abilities, organizational talents, and flexibility to adapt in a challenging and fast-moving environment. Physical endurance to stand for extended periods and handle boxes weighing between 10 to 35 pounds is also required. Job Duties

  • Deliver warm, welcoming, and memorable experiences for every guest and client
  • work closely with Kitchen Manager(s) and Chef(s) to ensure daily food preparation is completed
  • meet daily quick service, food safety, quality, availability, merchandising, and guest service standards
  • ensure proper food quantities are set for daily and ongoing service
  • participate in safety logs including food temperatures, rotation, and waste
  • maintain safe food handling practices
  • uphold proper uniform, hygiene, hand-washing, and glove use
  • maintain a safe work environment by following safety rules
  • follow daily prep and item lists as assigned
  • support operations by filling gaps as necessary
  • respond efficiently to guest and client feedback with reporting to supervisor
  • communicate service or quality issues with Restaurant Supervisor or Food Operations Manager
  • stay knowledgeable of all menu items, prices, and specials
  • assist with dishwashing as needed
  • maintain a clean, safe, and organized work environment
  • uphold and demonstrate understanding of company policies and procedures
