Craig Hospital's Food Services department plays a critical role in supporting patient recovery and staff well-being by providing nutritious, high-quality meals in a safe and welcoming environment. The hospital is currently seeking a dedicated Food Production Specialist to join their team. This full-time position is based at 3425 S Clarkson St, Englewood, CO 80113, with scheduled shifts spanning Saturday, Sunday, Monday from 6:00 AM to 2:30 PM and Thursday, Friday from 9:30 AM to 6:00 PM.

The Food Production Specialist will work closely with the Food Service leadership team to implement a world-class food service program focused on quality, nutrition, and safety. The role demands an individual with significant experience in high-volume cooking or baking who is adept at preparing meals for patients, staff, and visitors in various settings including floor bistros and the main cafeteria. Key responsibilities include preparing menu items following strict departmental policies for sanitation and presentation, utilizing a variety of commercial cooking equipment, and ensuring adherence to food safety standards such as temperature control and hygienic handling of ingredients. The Specialist will also be tasked with supporting special dietary requirements, contributing to recipe standardization and improvements, and maintaining accurate production and temperature logs.

Job Requirements

Job Duties

  • Prepare all menu items for patients, staff, and visitor meals and catering events following all departmental policies and procedures for sanitation, food quality, and presentation
  • Use a variety of large volume cooking equipment including convection ovens, steamers, steam-jacketed kettles, tilt skillet, range, and mixers
  • Ensure high standards of sanitation, cleanliness and safety at all times including principles of time and temperature and the proper use of gloves
  • Prep food according to prep sheets and departmental procedures for all ingredients that can be washed, peeled, cut, and measured in advance
  • Measure, mix, and prepare all menu items using standardized recipes
  • Suggest improvements to standardized recipes
  • Prepare food for special diets including puréed and ground diets
  • Assist in determining production needs using production sheets, historical data and experience
  • Accurately record amount prepared and leftover on production sheets
  • Ensure food is cooked and held at its proper temperature at all times
  • Keep hot foods stored above 140 degrees
  • Keep cold foods stored below 40 degrees
  • Accurately complete temperature logs
  • Schedule and prepare the cooking of menu items to promote freshness as close to service time as possible
  • Communicate with cafeteria and floor personnel to ensure food availability
  • Transport food to cafeteria and patient floor as needed
