The Commissary Manager role at PROformance Open Market is a pivotal leadership position responsible for overseeing the company's central kitchen operations. This high-volume role demands hands-on leadership to manage the production of food items that meet stringent quality and food safety standards. In this position, the manager supervises and trains kitchen staff across various food preparation stations including prep, cooking, assembly, packaging, cooling, and labeling. They develop schedules aligned with demand forecasts and profitability goals while maintaining gold standards in food quality, portion control, and sanitation. Additionally, they play a direct role in resolving quality issues and customer complaints linked to production. Collaboration with operations and procurement teams is essential for maintaining ingredient inventory and ensuring smooth commissary function. Job Requirements

  • High school diploma or equivalent
  • Proven experience managing high-volume commissary or kitchen operations
  • Knowledge of food safety standards including ServSafe and local health regulations
  • Ability to train and supervise kitchen staff effectively
  • Strong organizational and multitasking skills
  • Excellent communication and leadership abilities
  • Ability to work in a fast-paced environment and adapt to change

Job Qualifications

  • Proven kitchen leader with strong experience in high-volume production or commissary environments

Job Duties

  • Oversee all daily commissary operations including food production quality control and food safety in a high-volume kitchen environment
  • Lead the preparation of fresh grab-and-go items such as salads sandwiches wraps entrees snacks and more while maintaining premium taste appearance and shelf-life performance
  • Develop implement and continuously improve recipes and production processes to enhance flavor efficiency and consistency
  • Ensure strict adherence to all food safety standards including ServSafe and local health department regulations
  • Train supervise and develop kitchen staff across all stations prep cooking assembly packaging cooling and labeling
  • Implement and maintain gold standards for food quality portion control presentation and sanitation
  • Manage production schedules inventory food costs and labor costs to achieve profitability targets
  • Prepare weekly production schedules
  • Address and resolve any quality issues or customer complaints originating from production
  • Collaborate with operations and procurement teams to forecast demand and maintain proper inventory of ingredients and supplies
  • Oversee equipment maintenance facility cleanliness and organization of the commissary
  • Step in as needed on any production station to support the team and maintain standards
  • Drive continuous improvement in processes waste reduction and operational excellence
