Job Description

Currently, Gracious Hospitality Management is expanding its footprint with its newest and most ambitious project located at 550 Madison Avenue, housed within the iconic Sony Building. This expansive 15,000-square-foot, multi-level dining destination features three unique culinary concepts, each crafted to offer distinct dining experiences. These include the second New York location of the Michelin-starred COTE Korean Steakhouse, an all-day multi-bar and dining concept called Bar Chimera, and an intimate sushi restaurant led by Michelin-starred Chef Masahiro Yoshitake named Sushi Yoshitake. The project showcases innovative design by Rockwell Group, with a special collaboration on the sushi concept by Yoshio Itai. This site is designed to deliver immersive, transportive dining that redefines the food and hospitality experience in Midtown Manhattan.

The role of the Food Expeditor at 550 Madison is vital to ensuring seamless kitchen-to-dining room operations. Serving as the final checkpoint before dishes reach guests, the Food Expeditor must guarantee every plate is accurate, beautifully presented, and delivered punctually. This position demands strong organizational skills, in-depth menu knowledge, and the ability to maintain composure and leadership during the apex of service hours. Food Expeditors are the lynchpin in communication between the culinary team and the front of house, facilitating a flawless dining experience through precise order coordination, active management of ticket flow, and rigorous quality assurance.

This position requires attention to detail in monitoring all dishes for presentation, portion control, temperature, and any special modifications requested by guests, including considerations for allergens and dietary restrictions. Additionally, the Food Expeditor manages the expo station, ensuring it remains organized and fully stocked while meeting the demands of a busy, high-volume kitchen environment. Leadership and training duties include directing runners, supporting team knowledge, and upholding the company’s core values of people, learning, culture, relationships, and sustainability.

Job Requirements

Job Duties

  • coordinates order flow between the kitchen and dining room managing multiple tickets concurrently and calling the pass clearly and efficiently
  • monitors ticket times and communicates proactively with kitchen staff to maintain pacing and flag delays to the Chef or floor management
  • confirms all dishes within a ticket are completed simultaneously before service
  • maintains thorough knowledge of all menu items ingredients and allergens to support quality control and team inquiries
  • reviews all tickets for accuracy modifications special requests and allergies resolving discrepancies before dishes leave the kitchen
  • performs a final quality check on every plate verifying presentation portioning temperature and adherence to Executive Chef standards
  • ensures guests with allergies or dietary restrictions receive correct dishes and that all modifications are properly executed
  • communicates when items are a gift from the house contain allergen modifications or have been adjusted for a guest request
  • maintains a clean organized and fully stocked expo station ensuring plate ware silverware and garnishes are prepared before service
  • completes assigned side work for setup and breakdown of expeditor and runner stations stocks supplies for dining to-go and delivery operations
  • keeps coolers and walk-ins stocked and organized and alerts management when supplies are running low
  • serves as the liaison between Front of House and Back of House facilitating clear communication throughout service
  • directs runners during service on table numbers seat positions and delivery sequence assists with menu knowledge and allergy training
  • trains new employees as assigned and assists other areas of the restaurant when requested by management
