Job Description
The Florida Department of Veterans' Affairs (FDVA) is a dedicated state agency that serves and supports U.S. military veterans. Within this framework, the Alexander "Sandy" Nininger State Veterans' Nursing Home, located in Pembroke Pines, Broward County, Florida, provides long-term skilled nursing care with a compassionate and professional approach. The FDVA is currently seeking a Food Control Specialist (Position Number 50000706), who will operate under the supervision of the Food Service Director and Food Service Administrator. This position is a career service role offering an annual salary of $36,092.42 plus a Competitive Area Differential of $956.80, with bi-weekly pay. The successful candidate will play an essential role in maintaining high standards of food safety, preparation, and service within the Veterans' Nursing Home's food service operations.
The Food Control Specialist's responsibilities focus on ensuring that food is stored, prepared, distributed, and served under sanitary conditions that meet state and facility safety regulations. The candidate will ensure all kitchen equipment is operated and maintained according to FDVA procedures and that the kitchen environment remains clean and sanitary. This includes setting and monitoring temperatures on grills, stoves, deep fryers, and broilers. The role requires expertise in estimating food requirements, and preparing and cooking a variety of hot and cold food items based on approved menus and recipes tracked through the Meal Tracker system.
Additional duties include handling specific food preparation tasks such as cutting and de-boning ham, poultry, and fish, slicing meats according to menu needs, and managing leftover meat items for efficient utilization. The position requires willingness and ability to work weekends, holidays, and overtime as needed, and the physical capability to lift up to 50 pounds. Communication skills in English must be proficient across writing, speaking, reading, and comprehension.

Job Requirements
- Must be able to communicate effectively in English
- Must be willing and able to work weekends and holidays

Job Qualifications
- Ability to communicate effectively in English including writing, speaking, reading and understanding
- One year of verifiable institutional cooking experience preferred
- Basic computer skills preferred
- Willingness to work weekends, holidays, and overtime as scheduled
- Capability to lift up to 50 pounds
Job Duties
- Ensure food is stored, prepared, distributed and served under sanitary conditions
- Ensure compliance with state and facility safety procedures during food production and equipment cleaning
