The available position is for a Food Control Specialist (Cook) at the Ardie R. Copas State Veterans' Nursing Home. This role is integral to the daily food service operations under the supervision of the Food Service Director and Food Service Administrator. The annual salary for this position is $36,092.42, paid bi-weekly. The individual selected will be responsible for ensuring that all food preparation, storage, and distribution occur under strict sanitary and safety conditions. This includes monitoring kitchen equipment, maintaining cleanliness, and coordinating the preparation of meals that meet the facility’s nutritional and quality standards.
The Food Control Specialist plays a vital role in maintaining compliance with both state and facility safety procedures, including food production and cleaning of equipment. They ensure that all meals are prepared with approved recipes, and they manage inventory and stock appropriately. Additional duties include operating kitchen equipment following the Florida Department of Veterans' Affairs procedures, ensuring proper temperature controls for food and equipment, and organizing the food storage areas ensuring proper rotation of stock.
The role requires physical ability to lift up to 50 pounds and the willingness to work weekends, holidays, and overtime as needed to meet the facility's demands. Moreover, successful completion of a Level II national background check and drug test is mandatory.

Job Duties
- Ensure that food is stored, prepared, distributed and served under sanitary conditions
- Ensure compliance with state and facility safety procedures in the operation of food production and cleaning of equipment
- Maintain clean and sanitary conditions in all kitchen food preparation and serving areas
- Operate and maintain kitchen equipment according to procedures
- Record food and equipment temperatures in the temperature book
- Report any faulty equipment to the supervisor
- Check in and put away stock deliveries
- Rotate stock in dry storage, refrigerators and freezers
- Assure all equipment is turned off properly and doors locked at night
- Keep chemical room clean and organized
- Maintain hand soap and paper towel dispensers in kitchen and restrooms
- Prepare and cook all types of hot and cold food items according to menu and approved recipes
- Cut, de-bone and slice meats as needed
- Utilize leftover meat items
- Conduct inventory checks and reorder items as needed
- Plan, organize and coordinate work assignments
- Check and approve food requisitions, deliveries and receiving reports
- Attend in-service training and perform related duties assigned by supervisor
- Perform other duties as assigned
