The Food and Beverage Manager role at the Twenty-Nine Palms Band of Mission Indians is a pivotal leadership position responsible for overseeing the entire Food and Beverage department operations. Job Requirements
- High school degree or GED
- Five years or equivalent supervisory or management experience
- Must pass periodic random drug screens
- Must be able to pass background suitability investigation
- Must obtain a Tribal Gaming License
- Must obtain all other applicable certifications and licenses
- Must provide proof of eligibility to work in the United States within 72 hours of employment

Job Duties
- Provide outstanding customer service to guests and all other employees by exceeding our mission statement
- Lead by example and carry out our Five Star Experience to Guests and all Team Members by fulfilling our Mission Statement, Service Promise and following department service standards
- Continually coach and support Team Members to ensure they have the skills, tools and resources to successfully complete their jobs, including delivering the Five Star Experience expectations
- Practice, support, and always promote Spotlight29 Casino & Tortoise Rock Casino Five Star Experience company-wide service mission and service standards
- Administer company and departmental policies and procedures including safety regulations
- Estimate food and beverage costs and requisitions or purchases supplies
- Assist Food and Beverage Director in estimating annual food and beverage budget
- Confer with food preparation and other personnel to plan menus and related activities such as dining room, bar, and banquet operations
- Investigate and resolve food quality and service complaints
- Review financial transactions and monitor budget to ensure efficient operation, and to ensure expenditures stay within budget limitations
- Access point of sale system for billing of events, restaurant, and other outlets to generate final guest checks and make corrections to server or cashier final checks
- Assist, when necessary, in providing service to customers to ensure quality of customer service is maintained at all times for Casino guests
- Ensure training and development of staff through daily stand up meetings, SMART philosophy, coaching, counseling and mentoring
- Responsible for accurate beverage controls through proper utilization of the Berg Liquor Control System
- Ensure proper liquor requisition procedures, correct amounts and brands requisitioned and stored using liquor breakage par sheets for each beverage outlet
- Ensure development, implementation and maintenance of daily checklists, product pars and clean up lists to create an inviting, consistent and professional environment
- Provide leadership and guidance to staff regarding restaurant and beverage standards, guest experience and consistent product quality
- Provide ideas and feedback with regard to advertising, marketing and product specials to increase revenues
- Utilize hourly sales reports and historical data to develop and maintain a proper scheduling matrix
- Provide ideas and feedback to improve staff productivity and increase revenues through sales contests
- Conduct monthly outlet beverage inventories to meet or improve pouring cost budget
- Abide by all State, Federal and local liquor regulations pertaining to serving alcoholic beverages
- Continually train staff in policies, procedures and service standards
- Ensure Food & Beverage department staff adhere to Casino’s cash handling policies and procedures
- Ensure Casino bars and food outlets are properly stocked with all necessary supplies
- May assist in interviewing job applicants interested in joining the staff
- Maintain excellent communications with all Directors and Supervisors
- Implement approved departmental policies and procedures
- Ensure budget monitoring and adherence by implementing effective processes
- Prepare necessary budget data
- Keep abreast of competitive changes including industry trends and local competition
- Develop, maintain and nurture a positive work environment
- Maintain a disciplined environment and promote safety, quality and productivity
- Help coordinate and supervise training, assignments and development of subordinates
- Ensure compliance with Minimum Internal Control Standards (MICS) and Tribal Internal Control Standards (TICS)
- Present a positive image of the Tribal organization to guests and vendors
- Follow all safety policies and attend safety meetings and training
- Make difficult decisions in a fair and honest manner
