Within Ho-Chunk, Inc., WarHorse Gaming operates as a specialized division focused on gaming and entertainment. Established in partnership with the Nebraska Horsemen's Benevolent and Protective Association (HBPA), WarHorse Gaming manages and facilitates casino gaming operations at Nebraska's traditional horse racing venues, including properties in Lincoln, Omaha, and South Sioux City. The Food & Beverage Manager position at WarHorse Gaming is a full-time, salaried role based in Lincoln, Nebraska. The schedule varies depending on business needs and includes working evenings, weekends, and holidays. Holding this role means taking charge of the overall operation and performance of assigned food and beverage outlets within WarHorse Gaming's facilities. The manager will oversee front-of-house operations and collaborate closely with culinary leadership to ensure the highest levels of quality, efficiency, and guest satisfaction are achieved consistently.

This managerial role involves a strong leadership presence where the individual will be responsible for staffing, training, financial performance, operational compliance, and maintaining rigorous service standards. The Food & Beverage Manager plays a critical role in driving revenue growth through effective team development and operational excellence. They ensure that every aspect from food quality to guest service meets exceptional standards, enhancing the overall guest experience and fostering a positive work culture throughout the department.

The manager will be accountable for overseeing inventory management, ordering supplies, monitoring food preparation and presentation, and supporting marketing initiatives aimed at increasing guest engagement and outlet profitability. Financial tasks include budget oversight, payroll management, and analyzing operational effectiveness to recommend improvements. The role also demands consistent enforcement of company policies, regulatory compliance including gaming regulations, and adherence to health and safety standards.

Job Requirements

  • Ability to secure and maintain NE Gaming License
  • food handler certification
  • ServSafe certification
  • TIPS alcohol certification
  • high school diploma, GED, or equivalent
  • eight years of food and beverage experience
  • five years of supervisory or management experience in food and beverage operations
  • proficiency with Microsoft Office Suite or related software
  • strong point-of-sale (POS) operational and programming experience
  • knowledge of health, hospitality, food service, and regulatory requirements
  • experience with budgeting, cost control, financial accountability, and operational reporting

Job Qualifications

  • High school diploma, GED, or equivalent
  • eight years of food and beverage experience
  • five years of supervisory or management experience in food and beverage operations
  • proficiency with Microsoft Office Suite or related software
  • strong point-of-sale (POS) operational and programming experience
  • knowledge of health, hospitality, food service, and regulatory requirements
  • experience with budgeting, cost control, financial accountability, and operational reporting
  • strong leadership, communication, problem-solving, and team development skills

Job Duties

  • Lead, schedule, supervise, train, and develop front-of-house team members
  • ensure compliance with all company policies, procedures, internal controls, gaming regulations, and applicable government requirements
  • promote and uphold the Mission, Vision, and Values of WarHorse Gaming
  • maintain high standards of guest service, food quality, safety, sanitation, and operational excellence
  • partner with culinary leadership to ensure food preparation, presentation, quality, and timeliness meet established standards
  • manage inventory levels and oversee ordering of food, beverages, equipment, and operational supplies
  • monitor food preparation, portion control, and presentation standards
  • develop and support promotional initiatives designed to increase outlet revenue and guest engagement
  • ensure proper collection of payment and authorization of approved complimentary transactions
  • assist beverage operations with cash handling controls and balancing procedures as required
  • conduct routine inspections of equipment, supplies, and work areas to ensure operational readiness
  • address guest concerns and service issues promptly while maintaining a high level of guest satisfaction
  • establish and communicate performance expectations and customer service standards for team members
  • monitor labor, food, and operational expenses to maximize profitability and efficiency
  • maintain departmental budgets, payroll records, and financial documentation
  • analyze operational performance and recommend strategies to improve revenue and profitability
  • attend required meetings, training sessions, and development opportunities
  • promote positive employee relations and foster a collaborative work environment
  • perform other duties as assigned
