The role of Manager of Food and Beverage Outlets at Sonesta International Hotels offers a dynamic opportunity to lead and oversee the food and beverage operations in a vibrant hospitality environment. This position is critical in ensuring that food and beverage quality standards and guest service benchmarks are consistently met, while departmental revenue and profit goals are achieved. The Manager will be responsible for managing multiple food and beverage outlets, ensuring smooth daily operations in compliance with federal, state, local regulations, brand standards, and hotel policies. Additionally, the role requires stepping in as Assistant Director of Food and Beverage in their absence.

Key responsibilities include managing outlet staff activities, enforcing policies and procedures, monitoring food and beverage sales, and ensuring high standards in inventory control, equipment maintenance, and facility cleanliness. The Manager will coordinate closely with other hotel departments such as Sales and Marketing, Catering, Rooms, Housekeeping, Maintenance, and Guest Services to promote teamwork and deliver seamless service experiences for guests. Moreover, the role involves maintaining solid relationships with vendors, regulatory agencies, and external contacts to oversee supplies, service issues, and compliance matters.

This position demands a balance of operational oversight and strategic contribution, including assisting in budget preparation and supporting food and beverage marketing initiatives at both the local and system-wide levels. The Manager will often be required to serve as the Manager on Duty and may take on additional duties as necessary to ensure operational excellence.

The ideal candidate will have some college education or relevant advanced training in food and beverage operations, complemented by at least two years of experience in a similar facility, preferably with supervisory responsibilities. A Bachelor’s degree in Hotel Management, Culinary Arts, or a related field is preferred. Fluency in English is required. Physical capabilities include moving about the facility, lifting up to 50 pounds, and performing tasks involving bending, stooping, and kneeling. Strong communication, reading, writing, mathematical, problem-solving, and organizational skills are essential for success, along with the required certifications such as alcohol awareness and valid food handler permits as dictated by local regulations.

Job Requirements

Job Duties

  • Manage the activities of assigned outlets staff, ensure proper coverage, communicate goals, and assign/prioritize work
  • Communicate and enforce policies and procedures with all staff
  • Recommend and/or initiate salary, disciplinary, or other staffing/human resources-related actions in accordance with company rules and policies
  • Ensure all staff is properly trained on quality and service standards and have the tools and equipment needed to effectively carry out their job functions
  • Monitor food and beverage sales and costs, and departmental profitability against goals within assigned areas of the food and beverage department
  • Monitor and maintain procedures to ensure the security and proper storage of food and beverage products, inventory, and equipment, ensure the security of monies, credit and financial transactions, replenish supplies, inventory, uniforms in a timely and efficient manner, and minimize waste and pilferage
  • Ensure that all food and beverage equipment are in proper operational condition and cleaned regularly, ensure that all food and beverage facilities including banquet/convention space are cleaned, vacuumed, and properly stocked according to anticipated business volume, notify Engineering immediately of any maintenance and repair needs
  • Conduct inventory according to established procedures and timeframes, assist with determining minimum and maximum stocks for all food, beverage, material and equipment
  • Assist with the development and implementation of local food and beverage marketing programs for the hotel, support system-wide food and beverage marketing programs and promotions, may participate in menu design and concepts with Director of Food and Beverage
  • Promote teamwork and quality service through daily communication and coordination with other departments including Sales and Marketing, Catering, Rooms, Housekeeping, Maintenance, and Guest Services
  • Interact with outside contacts such as guests to ensure their satisfaction, vendors to ensure adequate inventory of supplies and equipment and to resolve any vendor performance issues, regulatory agencies regarding safety and compliance matters, and other contacts as needed including professional organizations, community groups, and local media
  • May serve as Manager on Duty or assist with other duties as assigned
