The Food & Beverage Manager – Restaurants & Bars plays a critical role within Pacific Hospitality Group, responsible for the leadership and daily management of the company's restaurant and bar outlets. This managerial position demands a dynamic individual who can oversee exceptional guest experiences, maintain financial performance, and ensure operational excellence. As the leader of the property's beverage program, the Food & Beverage Manager is charged with developing cocktails, selecting wine and spirits, controlling beverage costs, and upholding bar standards. This role requires overseeing team training across all dining venues, which includes bars, lounges, seasonal outlets, and special event locations.

In collaboration with Culinary, Marketing, and Operations teams, the Food & Beverage Manager drives innovative food and beverage offerings that elevate customer satisfaction while aligning with the resort's objectives. This synergy aids in maximizing profitability, controlling expenses, and delivering luxury service standards. The position offers a salary range of $80,000 to $85,000 and involves managing diverse teams such as supervisors, bartenders, servers, and support staff, providing direction, coaching, and leadership to deliver exceptional service standards.

A vital part of the role is maintaining beverage program leadership by partnering with vendors and distributors, negotiating pricing, creating seasonal menus, conducting training and certification programs, and maintaining inventory and cost controls. Financial acumen is essential as the manager utilizes forecasts, financial reports, and operating metrics to enhance revenue growth and profitability. Daily operational oversight includes monitoring service delivery, ensuring cleanliness, managing safety and compliance with health and alcohol service standards, and resolving any guest concerns.

Training and development are critical focuses of this role, with the Food & Beverage Manager responsible for implementing comprehensive onboarding and continuous training programs. The individual fosters an environment of accountability, engagement, and professional growth among the team. Collaboration with marketing is also key, with involvement in creating beverage promotions, holiday programming, and special events that support revenue generation. The role also participates in strategic planning and business operations to support departmental initiatives, budget preparation, staffing decisions, and guest service enhancements.

Job Requirements

  • High school diploma or GED required
  • College degree in Hospitality Management, Business, or related field preferred
  • Minimum 3-5 years of progressive Food & Beverage management experience in a luxury hotel, resort, upscale restaurant, or high-volume bar environment
  • Minimum 2 years of direct bar management, beverage program management, or beverage leadership experience
  • Proven experience developing cocktail programs, wine programs, beverage menus, and staff training initiatives
  • Strong understanding of beverage cost controls, inventory management, purchasing, and menu engineering
  • Comprehensive knowledge of restaurant operations, bar management, luxury service standards, and guest relations
  • Strong understanding of wine, spirits, beer, cocktail development, and beverage trends
  • Demonstrated ability to lead and motivate teams in a fast-paced, high-volume environment
  • Strong financial acumen with experience managing budgets, forecasting, labor costs, and profitability metrics
  • Excellent interpersonal, coaching, communication, and conflict-resolution skills
  • Proficient in POS systems, inventory systems, Microsoft Office, and hospitality technology platforms
  • Ability to analyze operational and financial data and make sound business decisions
  • Must be able to work a flexible schedule including evenings, weekends, and holidays
  • Must be at least 21 years of age
  • Current Food Handler Card or ability to obtain within 30 days of employment
  • Current RBS alcohol awareness certification
  • WSET, Court of Master Sommeliers, BarSmarts, or similar beverage certifications preferred

Job Duties

  • Manage supervisors, bartenders, servers, support staff, and other Food & Beverage team members within assigned outlets
  • Provide overall direction, coaching, and leadership to ensure exceptional service standards and operational execution
  • Monitor daily operations of all assigned restaurant and bar venues to ensure efficient execution, proper staffing, adherence to service standards, and achievement of departmental goals
  • Serve as the primary owner and administrator of the property's beverage program, including cocktail development, wine and spirits selection, beverage cost controls, and bar standards
  • Partner with vendors, distributors, and beverage partners to source products, negotiate pricing, and secure promotional opportunities
  • Develop and implement beverage menus and promotional initiatives designed to drive revenue and enhance guest experience
  • Conduct beverage training and certification programs for bartenders, servers, and managers
  • Achieve budgeted revenues, control expenses, and maximize profitability through labor management, purchasing controls, and menu engineering
  • Ensure guests receive outstanding, consistent, and personalized service by engaging with them and resolving concerns promptly
  • Develop and execute comprehensive onboarding and training programs for all restaurant and bar team members
  • Maintain appropriate inventory levels, oversee purchasing and vendor relationships, and ensure compliance with health, safety, and alcohol regulations
  • Partner with Marketing and Culinary teams to develop beverage promotions, holiday programming, and special events
  • Assist in preparation of annual operating budgets and business plans
  • Respond to guest inquiries and coordinate special arrangements and VIP requests
