Job Requirements

  • College degree preferred in hotel or restaurant management, business administration
  • Minimum five years of restaurant management experience at a department head level
  • Food Handler Certification
  • Strong leadership, interpersonal and training skills
  • Proficiency in MS Excel, Word and PowerPoint
  • Excellent English communication skills
  • Ability to manage multiple outlets and teams
  • Experience with budget control and financial management
  • Capability to handle guest complaints and emergencies
  • Commitment to maintaining high sanitation and service standards
  • Availability to work evenings, weekends and late nights as part of shift rotations

Job Duties

  • Manage all F&B outlets, banquet and bar operations and colleagues daily
  • Develop and implement goals and strategies to enhance guest and employee satisfaction
  • Forecast and schedule staffing using hotel tools and guidelines
  • Oversee training for new and current food and beverage employees
  • Control standards including conduct, dress code, sanitation according to policies
  • Formulate and recommend improvements for employee performance and teamwork
  • Monitor and manage outlet expenses to maximize revenue and profit
  • Ensure comprehensive knowledge of menu items and beverage program
  • Collaborate with Chef and Sous-Chefs to maintain quality and guest satisfaction
  • Participate in Food and Beverage department meetings
  • Monitor special events preparation and coordination
  • Review daily log emails from departmental managers
  • Manage waste reduction initiatives
  • Maintain inventory and par stock levels
  • Ensure equipment is kept in perfect working condition and report deficiencies
  • Manage beverage stock including wine and cocktail lists
  • Apply financial knowledge including Profit and Loss statement understanding
  • Control beverage cost and budget adherence
  • Handle human resources duties such as interviewing, evaluating, discipline, termination
  • Resolve guest complaints ensuring maximum satisfaction
  • Maintain approved purveyors list and cost control procedures
  • Assist in staff training and coaching
  • Develop new procedures and promotions for guest patronage
  • Foster effective communication between operating departments
  • Complete accurate accident reports
  • Communicate regularly with upper management
  • Respond appropriately to hotel emergencies
  • Perform other tasks as assigned by management
