Job Requirements

  • Food safety certification
  • alcoholic beverage certification
  • ability to stand for long periods

  • four-year degree in Hospitality Management or Culinary Arts or equivalent experience
  • ten years or more food and beverage management experience
  • five years in upscale dining management

Job Duties

  • Develops an operating budget for each revenue outlet
  • monitors and adjusts to meet budget goals
  • develops capital budget and recommends equipment/facility renovations
  • ensures proper cash and charge procedures
  • manages staffing needs including recruitment, training, and supervision
  • plans organizational charts and schedules
  • implements orientation and professional development
  • monitors employee records to control labor costs
  • enforces standard operating procedures and club policies
  • oversees marketing and sales promotions for outlets and events
  • approves menu items, pricing, and designs
  • sets quality and quantity standards
  • ensures compliance with legal and safety requirements
  • monitors maintenance and safety policies including OSHA regulations
  • researches products to evaluate cost and benefits
  • maintains personnel and purchasing records
  • consults with kitchen and purchasing staff
  • greets members and supervises service
  • opens and closes facility as needed
  • develops wine lists and sales programs
  • maintains written standards and procedures
  • handles member complaints and corrective actions
  • participates in club committees
  • oversees facility appearance and cleanliness
  • monitors employee dress codes
  • approves invoices and inventory reports
  • ensures proper accounting and reconciliation
  • maintains records of special events and business volumes
  • manages reservation systems and payroll
  • approves entertainment
  • engages in long-range departmental planning
  • maintains vendor relations
  • collaborates with financial officers on reports
  • sets operating hours
  • serves as manager-on-duty
  • manages catering correspondence
  • completes inventory checks
  • implements sanitation schedules
  • completes other tasks assigned by General Manager
