Four Seasons Resort O'ahu at Ko Olina is a luxury beachfront resort located on the sunny western coast of Oahu, Hawaii. This resort offers a perfect blend of classic Hawaiian style and unparalleled luxury, featuring panoramic ocean views, lively pools, lagoons, and a variety of recreational activities such as outrigger canoe rides, golf at the Ko Olina Golf Club, and relaxation at the Naupaka Spa & Wellness Centre. We are currently seeking a Full Time Fish Sommelier to join our team at the Four Seasons Resort O'ahu at Ko Olina. This exciting role offers an hourly wage of $26.00 and reports directly to the Assistant General Manager. The Fish Sommelier plays a vital role in enhancing the dining experience by motivating and mentoring staff on fish and seafood knowledge, inspiring guests with exceptional service, and creating an environment of excellence in food, service, and hospitality. The Sommelier works closely with culinary leadership to source unique and high-quality fish and seafood products, and acts as an ambassador connecting the resort with local fishermen and purveyors.

This position requires passion for seafood, sustainability, and fishing culture, alongside strong interpersonal skills to engage guests and educate staff. Responsibilities include recommending and selling fish to guests, organizing special dining events, maintaining high standards of fish display, and conducting continuous training for the service team. The Fish Sommelier is essential to driving sales and fostering an atmosphere of hospitality and sustainability at Mina's Fish House, part of the MINA Group – a leader in upscale and innovative restaurant management known for its acclaimed concepts led by Chef Michael Mina.

Job Requirements

  • Previous restaurant or fine dining experience
  • Extensive fish and shellfish knowledge
  • Established relationships with fish mongers and fish markets/purveyors
  • Passion and knowledge for fishing and sustainability
  • Excellent basic math skills
  • Ability to operate POS and Microsoft-based computer systems

Job Duties

  • Recommends and sells fish and shellfish to guests on the floor, visits each table prior to ordering
  • Communicates with assigned servers any orders or specific guest preferences
  • Works closely with the Executive Chef and culinary leadership to source unique and high-quality fish
  • Acts as the ambassador for Mina's Fish House with local fishermen, fish markets and purveyors
  • Organizes and promotes special guest offerings including line to table dinners
  • Conducts continuous fish and shellfish training with service team and provides training for all new hires
  • Participates in pre-shift meetings and educates the team on fish species, fishing, history and preparation
  • Prepares and sets up appealing and professional fish displays
  • Performs daily cleaning and simple maintenance to the Fish Display and Lobster Tank
