This Culinary Lead position at the Pueblo of Sandia involves managing and leading culinary operations within the food service venues under limited supervision. Job Requirements

  • High school diploma or GED certification
  • two years food preparation experience including one year supervisory experience
  • successful completion of New Mexico Food Handlers course
  • ability to pass a stringent background investigation
  • ability to pass pre-employment and random drug screenings

Job Qualifications

Job Duties

  • Assist executive chef and restaurant manager with training of line cooks
  • prepare weekly work schedules and daily break schedules for pantry staff
  • organize daily food production schedule conforming to cover forecast
  • ensure kitchen recipes are followed and storeroom requisitions prepared to maintain par levels
  • ensure kitchen staff work in a sanitary, safe, and productive manner
  • adhere to standard recipes and plating instructions
  • prepare quality food timely for appetizers, salads, soups, sauces, entrées, and vegetables
  • oversee food preparation processes to maintain consistency, quality, and adherence to standards
  • ensure all food on service line is excellent in preparation, taste, and presentation
  • promote cooperation among kitchen and restaurant service employees to assure best guest service
  • maintain clean and orderly kitchen workstations and storage areas
  • assign daily cleaning tasks to kitchen staff
  • advise management on necessary equipment repairs and ensure timely completion
  • maintain proper temperature requirements and complete temperature logs
  • enforce personnel personal sanitation standards
  • investigate and resolve customer complaints about food quality and service
  • responsible for opening and closing the kitchen as necessary
  • ensure safety gloves and latex gloves are worn when appropriate
  • control food preparation quantity to prevent waste
  • perform additional duties as assigned
  • maintain punctual and regular attendance according to Pueblo of Sandia attendance policy
