The First Cook position at Newark Beth Israel Medical Center, part of the RWJBarnabas Health system, is a part-time, day-shift opportunity with a competitive pay rate of $23.40 per hour. This role is based within the Dietary Management department, where food preparation, safety, and service are critical components of patient and customer satisfaction. The First Cook will take on a variety of routine yet important kitchen tasks related to patient food service including production, service, food delivery, cleaning, storage, and accountability in compliance with regulatory standards and practices. The role requires working knowledge of culinary methods, hygiene standards, and effective kitchen equipment operation to maintain high-quality food and service.

This position demands a hands-on approach to food preparation, involving tasks such as measuring, mixing, washing, peeling, cutting, and trimming a wide range of ingredients including fruits, vegetables, meats, poultry, and fish. The First Cook will ensure food products meet quality expectations by tasting items, reading menus, estimating food requirements accurately, and maintaining detailed records for efficient production and supply requisition. A strong emphasis is placed on safety and sanitation as the First Cook will be responsible for cleaning and sanitizing workstations and equipment while following HACCP policies and participating in regular safety trainings.

As a key member of the kitchen team, the First Cook is expected to produce batch goods using advanced cooking techniques, follow complex recipes, and assist with the supervision and training of less experienced cooks. The role may involve oversight of production staff, assigning tasks, and using production software for inventory management. With an emphasis on culinary skill, advanced knife handling, and the ability to prepare special diet meals, this position plays a crucial role in delivering a satisfying dining experience for patients and customers alike.

Job Requirements

  • Four or more years of related work experience
  • ServeSafe certification required or completion within 90 days of hire
  • Ability to work potential shifts between 5:30am-8:00pm Sunday through Saturday
  • Ability to perform advanced cooking tasks independently
  • High school diploma or GED preferred
  • Knowledge of kitchen equipment operation and cash-handling procedures preferred
  • Capability to follow HACCP and safety protocols
  • Ability to stand and work in a kitchen environment for extended periods
  • Ability to lift and move foodstuffs and supplies safely

Job Qualifications

  • Minimum of four years related work experience
  • High school diploma, GED or equivalent preferred
  • Knowledge of basic kitchen equipment operation and cash-handling procedures preferred
  • ServeSafe certification required or to be obtained within 90 days of hire
  • Advanced knife skills
  • Ability to follow complex recipes and food handling procedures
  • Experience with food production software preferred
  • Strong customer service orientation
  • Ability to supervise and train less experienced cooks

Job Duties

  • Prepare food and serve customers at an a la carte station
  • Operate kitchen equipment to measure and mix ingredients, wash, peel, cut and shred fruits and vegetables, trim and cut meat, poultry or fish
  • Provide highest quality of service to customers at all times
  • Taste products, read menus, estimate food requirements, check production and keep records for planning and requisition
  • Clean and sanitize work stations and equipment following regulatory rules and procedures
  • Comply with HACCP policies and participate in safety meetings and training
  • Produce batch goods using classical and contemporary cooking, plating and garnishing techniques
  • Follow complex recipes and product directions for preparing, seasoning, cooking, tasting, carving and serving food
  • Assist with supervision of kitchen personnel
  • Select recipes, prepare bakery items, receive inventory, move and lift foodstuffs and prepare special diet meals
  • Serve as a lead cook and guide training for less experienced cooks
  • Perform advanced cooking duties independently
  • Use advanced knife skills
  • Oversee production staff and assign tasks
  • Enter production data and manage inventory in software
  • Perform other duties as assigned
