The Sous Chef position at this new Trader Vic and Plum Market location near San Francisco and Oakland represents an exciting opportunity for culinary professionals seeking to advance their careers in a fast-paced and guest-focused environment. The Sous Chef supports the Chef de Cuisine, plays a critical role in daily kitchen operations, and ensures all food preparation and presentation meet the company’s quality and safety standards. This role requires flexibility as shifts may vary including weekends and holidays, and full-time availability is expected.

The Sous Chef will have responsibilities including leading and mentoring team members, managing inventory and orders, maintaining compliance logs and cleanliness, and performing operational audits. This role demands leadership qualities, organization, multi-tasking abilities, and excellent interpersonal skills to interact effectively with a diverse team and guests. Physical requirements include standing and walking throughout shifts and lifting up to 40 lbs. With a preference for individuals holding an Associate degree or higher, candidates must also have two years of previous Sous Chef experience and relevant multi-store management experience if applicable.

Job Duties

  • Model and provide exceptional guest service and effectively resolve guest issues
  • Will open the kitchen or manage the mid shift, and train, mentor and coach team members to succeed
  • Daily execution and maintenance of all prepared food items adhering to the Plum Market program
  • Assign prep lists and complete prep list given by Chef de Cuisine
  • Place orders, receive orders, direct utility team members on proper stocking and rotation of inventory
  • Maintain a clean and sanitized workstation
  • Maintain all compliance logs
  • Track team member time and attendance in the absence of the Chef de Cuisine
  • Ensure team member compliance with all relevant policies and standards
  • Complete all administrative work as assigned by the Chef including scheduling and back-office duties
  • Perform daily and weekly operational audits
  • Ensure adherence to all promotional programs and report deficiencies
  • Perform daily kitchen inspections for company standards in presentation, stock replenishment, and housekeeping
  • Fulfill all responsibilities of the Chef in his/her absence
