The Food & Beverage Manager role at Grand Bohemian Lodge is a critical leadership position focused on coordinating, supervising, and directing all aspects of food and beverage outlet operations. This is a full-time, yearly salaried role aimed at maintaining profitable operations while ensuring high-quality products and excellent service standards. The manager plays a pivotal role in marketing ideas to promote business, managing employee turnover, maintaining revenue and payroll budgets, and supporting budgeted productivity without compromising quality.

The manager oversees daily operations, supervises outlet personnel, promptly resolves guest complaints, and collaborates with other food and beverage managers ensuring seamless communication and operational coherence. Supporting loss prevention efforts and preparing necessary reports such as wage progress, payroll, and revenue are key responsibilities. Additionally, the F&B Manager monitors service quality, assists in menu planning, and enforces compliance with local liquor laws, health, sanitation regulations, and standard operating procedures.

Visibility and hands-on leadership during meal periods, staff performance evaluations, employee training, and participation in departmental and hotel-wide training initiatives are integral to the position. The manager also takes part in recruiting front-of-house staff, handling tip reporting, and implementing corporate promotions if applicable. Ultimately, they strive to ensure exceptional guest satisfaction while fostering a respectful and service-driven environment.

Job Requirements

Job Duties

  • Oversee all aspects of the daily operation of the outlet
  • Supervise outlet personnel
  • Respond to guest complaints in a timely manner
  • Work with other F&B managers and keep them informed of issues as they arise
  • Keep immediate supervisor fully informed of all problems or matters requiring his/her attention
  • Assist in coordinating and monitoring all phases of Loss Prevention in the outlet
  • Prepare and submit required reports in a timely manner
  • Ensure preparation of required reports, including wage progress, payroll, revenue, employee schedules, quarterly action plans
  • Monitor quality of service in F&B outlet
  • Assist in menu planning and preparation
  • Ensure compliance with all local liquor laws, and health and sanitation regulations
  • Ensure compliance with SOPs in all outlets
  • Ensure compliance with requisition procedures
  • Be visible on the floor and assist staff as needed during each meal period
  • Conduct staff performance reviews in accordance with Highgate Hotel standards
  • Ensure the training of employees on SOPs and technical job tasks
  • Be involved in and/or conduct departmental and hotel training (CARE, One to One, etc.)
  • Interview candidates for front-of-house F&B positions and follow standards for hiring approvals
  • Complete tip reporting
  • Understand, implement and monitor corporate promotions in outlet (if applicable), including buffet and three-meal concept standards
  • Ensure overall guest satisfaction
