The Food and Beverage Manager role at Driftwood Hospitality Management involves overseeing all food and beverage operations including the restaurant, room service, and lounge areas. This role requires greeting and escorting guests to tables, supervising all staff, and maintaining courteous and efficient operations to deliver a high-quality product and exceptional service to restaurant customers. Since the hotel operates 24/7, the position demands flexibility with varied shift days, starting times, and working hours.
As the Food and Beverage Manager, you will be responsible for managing the food and beverage service to consistently meet the high standards defined by the hotel and Hilton brand standards. You will control the flow of customers and interaction between front and back-of-house during service, ensure team members maximize sales opportunities, and maintain brand standards alongside high customer service levels. Handling customer inquiries tactfully and professionally is key, along with managing all transactions accurately during service. You will also manage team member schedules, stock levels, and control wastage to maintain operational efficiency.
This position entails assisting the Restaurant Manager or Food and Beverage Director in hiring, training, supervising, counseling, and disciplining restaurant staff to guarantee efficient outlet operations. Maintaining payroll, conducting pre-shift and departmental meetings, and communicating important information such as daily specials, house counts, promotions, and menu changes are essential tasks. Meeting and greeting guests, answering telephone reservations, maintaining communications with all departments, and participating in marketing efforts are also crucial responsibilities.
A critical part of the role is monitoring product quality and guest satisfaction by ensuring food quality is consistent, appealing, and prepared to guest specifications. You will gather guest feedback to continuously improve service standards. Financial management duties include maintaining outlet profitability by controlling payroll and equipment costs, minimizing loss and misuse, managing inventory by calculating par stock levels, ordering supplies, and ensuring proper stocking. Regular maintenance of equipment through repair calls and staff training on proper use is expected.
This managerial role supports the entire Food and Beverage operation by supervising other areas if necessary, handling special projects, running promotions, and contributing to public relations and marketing initiatives. Maintaining a clean and safe environment is a priority by assigning and assisting with cleaning tasks and strictly adhering to company policies and safety procedures, including fire prevention and emergency protocols.
The successful candidate will maintain a neat, clean, and well-groomed appearance as per team member handbook standards, perform any related duties as requested by the manager, and assist other restaurant personnel as needed. This role requires resilience and the ability to work under pressure, excellent knowledge of food outlet operations, supervisory skills, service techniques, and guest interaction expertise. A current Food Handler Card and Alcohol Awareness certification are mandatory. Knowledge of applicable liquor regulations and ability to operate beverage equipment such as coffee makers are also required.

Job Duties
- Manage the food and beverage service to consistently meet high standards as defined by the hotel and Hilton brand standards
- Effectively control the flow of customers and the interaction between the front and back-of-house throughout service
- Ensure team members maximize all sales opportunities

- Meet and greet guests as they arrive, escort them to their table, and present menus
- Answer telephones in a clear voice, coordinate and document reservations
- Maintain communication with all departments and attend relevant meetings
- Participate in marketing efforts of restaurants, assist in creating menus, survey competition and report food trends
- Monitor product quality and guest satisfaction in the restaurant
- Maintain profitability of outlet to support overall hotel operations
- Control payroll and equipment costs minimizing loss and misuse
- Ensure par stock levels by calculating inventory, ordering and stocking supplies
