Job Requirements
- Minimum three years of New York City restaurant experience as a sushi chef
- proficiency in butchering multiple fish and shellfish species
- ability to prepare sushi rice and other related ingredients
- strong knowledge of Japanese knife skills and traditional ingredients
- possession of personal knives
- ability to maintain focus and quality under pressure
- strong communication skills
- must have open availability
- preferred New York City Food Handler’s Certification

Job Duties
- Butcher multiple fish and shellfish species
- prepare sushi rice and all ingredients related to service
- maintain product quality and develop creative presentations
- apply Japanese techniques and knife skills
- maintain sushi bar station cleanliness and DOH compliance
- communicate with staff to ensure special requests and allergy considerations are met
- educate staff on Japanese ingredients and cuisine
