Job Requirements

  • Minimum three years of New York City restaurant experience as a sushi chef
  • proficiency in butchering multiple fish and shellfish species
  • ability to prepare sushi rice and other related ingredients
  • strong knowledge of Japanese knife skills and traditional ingredients
  • possession of personal knives
  • ability to maintain focus and quality under pressure
  • strong communication skills
  • must have open availability
  • preferred New York City Food Handler’s Certification

Job Qualifications

Job Duties

  • Butcher multiple fish and shellfish species
  • prepare sushi rice and all ingredients related to service
  • maintain product quality and develop creative presentations
  • apply Japanese techniques and knife skills
  • maintain sushi bar station cleanliness and DOH compliance
  • communicate with staff to ensure special requests and allergy considerations are met
  • educate staff on Japanese ingredients and cuisine
