The company is currently seeking a skilled Butcher / Protein Prep Specialist to join their team on a part-time basis. This role is critical to the success of the restaurant, as it directly impacts food quality, consistency, yield optimization, and food cost control. The ideal candidate will have five or more years of professional butchery or protein preparation experience, with the expertise to minimize waste, maximize yields, and execute all protein marinades exactly per recipe without supervision. The position offers a competitive base pay of $21 to $23 per hour, plus an additional $3 to $5 per hour in tips, varying by shift and volume. Scheduled for 20 to 30 hours per week, this role provides a stable, prep-focused working environment with opportunities for growth within the company.

As a Butcher / Protein Prep Specialist at Shawarma Guys, you will be responsible for the precise preparation, trimming, slicing, and marination of all beef and chicken proteins used in daily operations. Your primary duties will include the careful cleaning and trimming of wagyu beef loins, operating commercial meat slicers safely, and maintaining consistent portioning standards to support yield targets and operational efficiency. Additionally, you will be tasked with fully marinating beef and chicken proteins following approved company recipes, ensuring correct ratios, mixing methods, and marination times are adhered to at all times.

The role also encompasses specialized chicken preparation including filleting leg and thigh combinations, removing tendons, cartilage, unwanted connective tissues, and the nerve from chicken tenders to ensure optimal texture and quality. All chicken proteins must be processed consistently and safely in compliance with food safety standards. You will be responsible for labeling, dating, and storing all marinated proteins correctly to maintain freshness and safety.

In addition to culinary skills, maintaining strict adherence to food safety, sanitation, and health department standards is essential. This includes properly cleaning and sanitizing all tools, equipment, slicers, containers, and workstations after each use, preventing cross-contamination between raw proteins, and keeping prep areas clean, organized, and inspection-ready.

This position demands a high degree of detail orientation, efficiency, cleanliness, cost control, and the ability to work independently to meet production deadlines in a refrigerated environment with exposure to raw proteins. The physical demands include standing for extended periods, repetitive cutting, trimming, marinating, and lifting up to 50 pounds.

Job Duties

  • Clean and trim wagyu beef loins by removing all silver skin and excess fat while minimizing waste and maximizing usable yield per box
  • Fabricate and prepare beef strictly to company specifications to ensure consistency and food cost control
  • Operate and safely use a commercial meat slicer to slice beef to required thickness and uniformity
  • Maintain consistent portioning standards to support yield targets and operational efficiency
  • Fully marinate beef per approved company recipes, ensuring correct ratios, mixing methods, and marination times are followed at all times
  • Clean and fillet chicken leg and thigh combinations while minimizing trim loss and maximizing usable yield
  • Remove all tendons, cartilage, and unwanted connective tissue with precision and efficiency
  • Clean and remove the nerve (white tendon) from chicken tenders to ensure optimal texture and quality
  • Properly devein chicken tenders in accordance with company standards
  • Fully marinate all chicken proteins per company-approved recipes, ensuring accuracy, consistency, and proper absorption
  • Ensure all chicken is processed consistently, safely, and in compliance with company guidelines and food safety standards
  • Accurately follow all company recipes for both beef and chicken without deviation
  • Measure, mix, and apply marinades to ensure maximum flavor infusion, proper coverage, and consistent results
  • Maintain strict control of marinade usage to minimize waste and maximize protein yields
  • Prepare daily protein quantities based on production needs for each location
  • Label, date, and store all marinated proteins correctly
  • Maintain strict adherence to food safety, sanitation, and health department standards
  • Properly clean and sanitize all tools, equipment, slicers, containers, and workstations after each use
  • Prevent cross-contamination between raw proteins at all times
  • Keep prep areas organized, clean, and inspection-ready
