We are currently seeking a skilled and motivated Experienced Bread Baker to join the team. This role is perfect for someone deeply passionate about artisan bread making, especially those with expertise in naturally leavened breads, fermentation processes, and working with freshly milled flour. The position is embedded within a high-volume production environment, requiring robust skills in mixing, shaping, baking, and maintaining consistent quality control. In addition to bread production, the baker will support the pastry team with laminated pastries, showcasing a willingness to collaborate and contribute to a diverse bakery output.

The Experienced Bread Baker will manage all stages of bread production, from adhering to established formulas and scaling procedures to operating and maintaining bakery equipment like mixers, deck ovens, loaders, proofers, and mills. This role demands a high degree of cleanliness, organization, and food safety awareness to uphold the company's standards. Effective communication with fellow production staff, management, and the pastry team is vital to ensure seamless operations.

Beyond production, the baker will assist with milling operations and flour handling as needed. The role also involves mentoring junior bakers and apprentices, fostering skill development and maintaining quality standards throughout the bakery. Flexibility in scheduling is essential, with shifts potentially including early mornings, weekends, and holidays.

Job Requirements

  • Degree from a post-secondary culinary arts training program is desirable
  • ServSafe or other food safety management certification preferred
  • Knowledge of foodstuffs and food safety is essential
  • Good math skills helpful
  • Ability to read, count, and write to accurately complete all documentation including weights and measurements
  • Ability to communicate and understand directions and instructions in English written and verbal including basic cooking directions and recipes
  • Knowledge of the use of kitchen utensils, tools and equipment including knife safety and working skills cutting, chopping, slicing etc
  • Manual dexterity is essential
  • Must possess finger dexterity to use utensils, knives and equipment adeptly
  • Frequently required to taste and/or smell food being prepared utilizing sanitary means
  • Subject to wet or slippery floors, temperature extremes and frequent changes in temperature, and excessive noise
  • Able to work in hot temperatures and freezer/cooler areas for extended periods of time
  • Must be able to stand for long periods of time, bend, stoop, reach, crouch, kneel, lift, push and pull
  • Properly lift up to 50-75 pounds
  • push, pull or move items weighing up to 100 pounds
  • Ability to work varied hours/days in a fast-paced environment in accordance with restaurant operations and adhere to the attendance requirements of the restaurant/production kitchen
  • Must adhere to the established appearance, hygiene, and uniform guidelines
  • Ability to adhere to and comply with all rules and regulations of the company including in particular the rules for safe handling of food

Job Qualifications

  • 2+ years of professional artisan bread baking experience preferably in a wholesale or high-volume environment
  • Strong knowledge of sourdough fermentation, mixing techniques, and oven management
  • Familiarity with working with freshly milled flours and heritage grains a plus
  • Ability to lift 50+ lbs and work in a physically demanding environment
  • Flexible schedule availability including early mornings, weekends, holidays as needed
  • Attention to detail, consistency, and cleanliness
  • Team player with a positive attitude and strong work ethic
  • Experience in pastry and laminated doughs

Job Duties

  • Mix, divide, shape, and bake a variety of artisan breads including sourdough, yeasted loaves, baguettes, rolls
  • Operate and maintain bakery equipment such as mixers, deck ovens, loaders, proofers, mills
  • Monitor fermentation and proofing to ensure consistent product quality
  • Adhere to established formulas, production schedules, and scaling procedures
  • Maintain high standards of cleanliness, organization, and food safety
  • Communicate effectively with the production team, pastry team, and management
  • Assist with milling operations and flour handling when needed
  • Support pastry production during peak times or staff shortages including laminated doughs and morning pastries
  • Help train and mentor junior bakers and apprentices
