The role of Experienced Baker at Hilton Hawaiian Village Waikiki Beach Resort invites skilled culinary professionals to join the resort's dedicated culinary team. This position is vital in delivering quality baked goods for the resort's various dining outlets and banquet services. The ideal candidate will have at least one year of baking experience, particularly in high-volume bakery settings such as hotels, and will be proficient in handling a variety of dough types including quick breads, starters, laminated doughs, enriched doughs, and breads. Responsibilities include mixing, scaling, lamination, shaping, proofing, and baking a diverse range of bakery products. Bakers in this position must be familiar with professional baking equipment such as large-scale mixers, proofers, scales, and dough sheeters. This role requires flexibility with overnight shifts, typically commencing between 1:00 am and 2:00 am, to prepare baked goods fresh for the resort's breakfast services and other dining needs. Compensation for the role ranges from $29.51 to $36.89 per hour, reflecting the skill and dedication required.

Job Requirements

  • Minimum of 1 year of experience as a baker
  • Knowledge of quick breads, starters, laminated doughs, enriched doughs, and various bread types
  • Proven experience in mixing dough, scaling products, lamination, shaping, proofing, and baking
  • Experience in a high-volume bakery preferred, particularly in hotel settings
  • Familiarity with baking equipment including large-scale mixers, proofers, scales, and sheeters
  • Ability to read and follow written recipes accurately
  • Open availability with the ability to work overnight shifts including weekdays, weekends, and holidays

Job Duties

  • Preparing and baking breakfast pastries, breads, rolls, and select desserts for restaurants and banquets
  • Maintaining adequate stock and ensuring proper storage and refrigeration
  • Minimizing spoilage and waste by using proper quantities and rotating products effectively
  • Preparing food items according to recipes to ensure consistent quality
  • Performing all necessary prep work for cakes, pies, mousses, and plated desserts
  • Keeping coolers and freezers organized and clean
  • Storing all food products properly including covering, labeling, dating, and managing expiration dates of perishable items
  • Conducting routine cleaning tasks following food safety and sanitation standards
  • Monitoring HACCP temperatures and maintaining good food safety and sanitation practices
