The Executive Steward at OKANA Resort and Indoor Waterpark plays a critical leadership role within the food and beverage department. This position is responsible for overseeing all stewarding functions across a large-scale, multi-outlet operation that includes 27,000 square feet of meeting and event space. The Executive Steward ensures the cleanliness, sanitation, and organization of all kitchen and back-of-house areas, maintaining equipment and supply inventories, and providing support for banquet and event operations. This role leads a team of stewards, ensuring that culinary and food and beverage teams are fully supported to deliver an exceptional guest experience. The ideal candidate will have a strong eye for detail, excellent leadership skills, and an unwavering commitment to safety and sanitation standards.
Key performance standards for this role include promoting a guest-first environment by maintaining pristine back-of-house areas, assisting in stewarding department budget management by monitoring chemical and supply costs, and leading and developing a motivated stewarding team. The Executive Steward must maintain compliance with health department regulations, OSHA standards, and sanitation laws while proactively identifying potential hazards. This role also involves managing business operations by optimizing staffing schedules, coordinating repairs and preventive maintenance, and collaborating with culinary and banquet leadership to support seamless event execution.
The successful candidate will have the opportunity to influence the work environment positively by fostering a people-first culture, managing onboarding, training, scheduling, performance feedback, and recognition programs for the stewarding team. Job Requirements
- High school diploma
- Minimum 3 years experience in stewarding or kitchen operations
- At least 1 year supervisory experience
- Knowledge of sanitation laws, OSHA requirements, and health department standards
- Strong organizational skills
- Ability to lead and motivate a team
- Fluent in English communication
- Food safety and sanitation certifications or willingness to complete them
Job Qualifications
- High school diploma
- Some college or coursework in Hospitality or Culinary Management preferred
- Minimum 3 years experience in stewarding or kitchen operations
- At least 1 year supervisory experience
- Experience in a high-volume, multi-outlet or banquet environment preferred
- Knowledge of sanitation laws, OSHA requirements, and health department standards
- Strong organizational and multitasking skills
- Ability to lead and motivate a large team
- Fluent in English communication
- Food safety and sanitation certifications or willingness to complete them
Job Duties
- Oversee the cleanliness and sanitation of all kitchen and back-of-house areas
- Ensure compliance with local, state, and federal sanitation and health regulations
- Lead, schedule, and supervise the stewarding team across all shifts and outlets
- Maintain equipment, china, glassware, silverware, and smallwares in clean and usable condition
- Monitor and maintain adequate par levels of kitchen supplies and smallwares
- Model positive leadership behaviors to inspire team performance
- Coordinate with culinary and banquet teams to fully support events and outlet operations
