Job Description
Omni PGA Frisco Resort & Spa is a luxurious resort located in Frisco, Texas, renowned for blending the warmth of Texas hospitality with refined comfort. The resort features 500 thoughtfully designed rooms and suites as well as 10 private ranch houses that reflect the spirit of the Lone Star State. Guests at Omni PGA Frisco can enjoy a variety of amenities including four shimmering pools, one of which is an adults-only rooftop infinity pool, the serene Mokara Spa, and 13 unique food and beverage venues. Whether guests are visiting for a weekend retreat or to celebrate a special occasion, the resort ensures an unforgettable experience enriched with genuine hospitality and premium service.
The Executive Pastry Sous Chef role at Omni PGA Frisco Resort & Spa is an essential position responsible for crafting and maintaining the resort's distinguished pastry identity. Reporting directly to the Executive Pastry Chef, this leadership role demands a blend of culinary artistry, operational precision, and innovative creativity to deliver exquisite pastry products that complement the resort's commitment to excellence and Texas luxury. The Executive Pastry Sous Chef will lead a skilled team to create outstanding pastries, desserts, and sweet amenities across multiple resort outlets including signature restaurants, banquets, golf activations, in-room dining, poolside service, and exclusive VIP offerings. This role is pivotal in ensuring culinary standards are upheld and that innovation in dessert presentation and menu development aligns with the latest trends while respecting classic pastry techniques.
In this position, the Executive Pastry Sous Chef is expected to manage daily pastry production with a focus on quality, consistency, and aesthetic appeal. The role includes overseeing prep planning, maintaining organized stations, managing food costs through strategic ordering and waste reduction, and ensuring compliance with Omni's culinary standards. Beyond culinary duties, the individual will be instrumental in mentoring and developing pastry team members, fostering a culture of respect, craftsmanship, and collaborative effort in line with Omni's service philosophy. The Executive Pastry Sous Chef will also act as the department leader in the absence of the Executive Pastry Chef, maintaining continuity and excellence across all pastry-related operations.
Innovation and creativity are highly valued in this role, requiring the development of signature desserts and seasonal menus that enhance the resort’s luxury brand. The successful candidate will balance classical pastry foundations with modern techniques, addressing dietary restrictions such as gluten intolerance, celiac disease, allergies, and dairy sensitivities, ensuring all guests can enjoy high-quality pastry experiences. Maintaining rigorous food safety, sanitation, and HACCP compliance standards is a critical responsibility, including proper labeling, storage, and rotation of ingredients, as well as workspace and equipment inspections. The role also entails close collaboration and communication with other departments such as Banquets, Restaurants, Purchasing, and Stewarding to flawlessly execute high-volume events and daily service responsibilities.
Overall, the Executive Pastry Sous Chef at Omni PGA Frisco Resort & Spa embodies the fusion of Texas hospitality and refined luxury through superior pastry offerings. This full-time leadership position is ideal for a skilled pastry professional seeking to advance their career in a prestigious luxury resort environment that values innovation, quality, teamwork, and exceptional guest experience.
