The Executive Sous Chef role is a highly visible and hands-on leadership position within the Food and Beverage department of Legends Global. Reporting directly to the Director of Food & Beverage and Assistant General Manager, this salaried and exempt position requires a talented culinary professional to oversee all operational aspects of the facility’s culinary and stewarding functions. The Executive Sous Chef acts as a key manager responsible for ensuring exceptional food quality, operational efficiency, strict adherence to sanitation standards, and the effective management of kitchen staff. They will directly manage the day-to-day operations of multiple food outlet kitchens, reinforcing compliance with both company policies and local health regulations.

This role goes beyond kitchen supervision, requiring strategic menu planning with a strong financial acumen to analyze food costs, manage inventory, and implement cost-saving budgets while maintaining the high-standard culinary output the company is known for. The Executive Sous Chef also plays an integral role in associate development – recruiting, training, motivating, and evaluating the kitchen team, including Sous Chefs and Lead Cooks. The position demands a proactive approach to vendor relations and purchasing as well as the capacity to step into the Executive Chef role when necessary. A significant portion of the role involves interacting with high-level clients, requiring strong communication and hospitality skills.

Ideal candidates will have a formal culinary education, preferably from an accredited culinary arts institute or an apprenticeship certification from the American Culinary Federation, and extensive experience managing high-volume kitchen operations. Proven expertise in improving operational efficiencies, controlling food and labor costs, and maintaining kitchen sanitation and safety standards is essential. To succeed as the Executive Sous Chef at Legends Global, candidates must be detail-oriented, technologically savvy with proficiency in Microsoft Office programs, and flexible in their work schedule, including nights, weekends, holidays, and potentially travel to support other venues in emergency situations.

Job Requirements

  • Degree or certification from an accredited culinary arts institute or apprenticeship certification from the American Culinary Federation
  • Three to five years experience as an executive sous chef in a high-volume food industry
  • Proven experience improving kitchen efficiencies, food and labor costs
  • Excellent management and communication skills
  • Knowledge of kitchen sanitation and equipment maintenance
  • Detail-oriented and organized
  • Proficient in Microsoft Word, Excel, and PowerPoint
  • Flexible to work nights, weekends, and holidays
  • Ability to provide short-term support to other facilities
  • Willingness to travel

Job Qualifications

  • At least 3 to 5 years of experience as an executive sous chef in high-volume food industry
  • Proven track record in improving kitchen efficiencies and controlling food and labor costs
  • Excellent managerial, financial analysis, team building, and communication/customer service skills
  • Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment
  • Detail-oriented and highly organized
  • Proficiency in Microsoft Word, Excel, and PowerPoint
  • Flexibility to work extended hours including nights, weekends, and holidays
  • Willingness to provide incidental or short-term support to other facilities
  • Ability to travel as required

Job Duties

  • Manage day-to-day operations of all food outlet kitchens
  • Implement and enforce departmental and organizational policies and procedures
  • Assure staff compliance with all standards, policies and procedures
  • Manage associates including Sous Chefs and Lead Cooks through scheduling and performance development
  • Plan innovative menus and maintain financial responsibility for menu mix
  • Analyze menu and food costs and prepare reports
  • Prepare cost-saving annual budgets
  • Oversee inventory management and requisitioning
  • Maintain vendor relationships
  • Oversee kitchen sanitation standards
  • Interact with high-level clients
  • Step in as executive chef when needed
  • Perform related duties assigned by management
