Job Description
The Hotel del Coronado is an iconic and historic resort located on Coronado Island, just minutes from Downtown San Diego. Known as one of the last surviving wooden Victorian beach resorts in the world, it has been a cherished landmark since its establishment in 1888. The property spans 28 acres and impresses guests with over 750 rooms, cottages, and villas, alongside a remarkable 65,000 square feet of banquet space. The resort features a robust food and beverage presence, boasting 10 outlets including 4 restaurants, 2 bars, a food truck, a marketplace, an ice cream shop, and in-room dining options. As the Executive Sous Chef at Hotel del Coronado, you will play a pivotal role in overseeing culinary operations across banquets and seasonal outlets, such as seasonal pop-ups and food and beverage activations. You will manage a team that includes 7 Chef Managers and between 30 to 40 cooks, ensuring smooth day-to-day operations and superior food quality. Reporting directly to the Executive Chef and maintaining a close working relationship with the Executive Banquet Chef, you will contribute to the development and implementation of cutting-edge menus that align with current trends and regional tastes, particularly for banquets and special events. Your leadership influence will help cultivate a high-performing team environment that emphasizes professional growth, engagement, and operational excellence.
This role demands a dedication to maintaining the highest standards of food safety, sanitation, and regulatory compliance to ensure the wellbeing of both guests and team members. Job Requirements
- Culinary degree or equivalent experience
- Minimum 5 years of experience in banquet or large-scale culinary operations
- Experience leading a culinary team including other managers
- Strong knowledge of food safety and sanitation standards
- Ability to work flexible hours including weekends and holidays
- Excellent organizational and communication skills
- Passion for hospitality and delivering exceptional guest experiences

Job Duties
- Assist in overseeing day-to-day culinary operations
- Manage the preparation and production of hotel meals ensuring high standards of food quality presentation cost controls and overall profitability
- Partner with the Executive Chef and Food and Beverage Director to develop and execute menu selections for special banquets and events incorporating current food trends and regional flavors
- Engage with guests and clients to gather feedback identify trends and support the Executive Chef in implementing improvements that enhance the dining experience
- Assist in managing and refining kitchen systems processes and workflows to maintain seamless operations
- Drive engagement and retention through performance management professional development and recognition programs
- Maintain compliance with health safety sanitation and alcohol awareness regulations ensuring the highest standards of guest and team member wellbeing
