The role of the Executive Sous Chef at MGM Resorts International is a distinguished leadership position within their culinary operations. As a pivotal member of the culinary team, the Executive Sous Chef partners closely with the Restaurant Executive Chef to drive culinary excellence across the property’s restaurants. This role requires a seasoned culinary professional who can lead high-performing kitchen teams, develop innovative menus, and ensure the highest standards of food quality and safety are consistently met. The Executive Sous Chef is instrumental in executing the restaurant’s business strategies, managing fiscal budgets, labor, and inventory controls while fostering a positive, inclusive, and productive workplace culture.
In this position, you will be responsible for daily kitchen operations, including staff scheduling, training, and development within a collective bargaining agreement environment. Job Requirements
- Must be at least 21 years of age
- bachelor's degree required or equivalent combination of education and experience
- previous leadership experience in a Collective Bargaining Agreement environment preferred
- experience in high-volume restaurant, luxury hotel, or fine dining operation preferred
- bilingual candidates encouraged, fluency in Cantonese or Mandarin highly preferred
- flexibility to work varied shifts including mornings, evenings, weekends, and holidays

Job Duties
- Lead and oversee daily restaurant kitchen operations
- manage fiscal budgets, labor productivity, and scheduling
- control inventory
- uphold guest service standards
- execute and develop menu strategies to ensure profitability
- assist Executive Chef with creating and implementing business plans and tactics
- execute policies, operating procedures, training programs, directives, menus, rules, and regulations for restaurant staff
- own execution of F&B and company-wide initiatives
- manage human resources responsibilities including fostering teamwork, providing coaching and performance feedback, recognizing achievements, and promoting employee satisfaction
- assist with quality hiring, training, and succession planning while supporting the company’s diversity commitment
- interact with guests to ensure satisfaction and promptly address complaints
- collaborate with service team to ensure seamless kitchen and dining room experience
- maintain excellent knowledge of food and beverage products, menu items, and kitchen equipment used
